I have recently joined a baking group called Fondbites, Bake Along by Subhashini, every week on monday,a baking dish will be challenged to the members of this baking group and we need to post before the next sunday. seriously am enjoying the member's bakes virtually. Trust me we bake fantastic baked goodies every week and love learning more about baking. After cheese crackers, this week we are baking basic Vanilla Cupcakes aka the Best Vanilla cupcakes ever. Eventhough we need to bake vanilla cupcakes, Subhashini suggested some variations to add in this basic cupcakes depending upon our wish. Since i had some leftover mango puree, i tried adding them to this vanilla cupcakes, and named this cutie cuppies as Mango vanilla cupcakes.
My kids are not fan of mango bakes, thats why i have added quarter cup of mango puree hence the colour of the cupcakes looks mildly yellowish. Thank god none noticed the addition of mango here, trust me this cupcakes are dangerously addictive. These cupcakes came out very soft with a super duper airy texture, with prefect sugar level and obviously buttery.I left the cupcakes just like that without adding any frosting. We enjoyed thoroughly with our cup of tea for both breakfast and dinner. Thanks Subhashini and we loved it.This cupcakes goes to Bake Along #30.

100grms Unsalted Butter (room temperature)
1+1/4cups Caster sugar
2nos Eggs
2tsps Vanilla extract
2cups All purpose flour
2tsps Baking powder
1/2tsp Salt
3/4cup Milk
1/4cup Mango puree
Preheat the oven to 350F, line muffin mould with paper liners or use thick muffin paper cups and arrange over a baking tray.
Sieve the flour,baking powder and salt,keep aside.
Beat the butter until it turns soft, add the sugar, vanilla extract and beat until the mixture turns yellow, creamy and fluffy.
Add the eggs one by one and beat until they turns smooth.
Divide the flour mixture into three, add the a part of flour and add half cup of milk, half of the mango puree,beat well.
Add the flour mixture and the remaining milk and mango puree alternatively, beat slowly, dont overbeat and stop once the batter turns smooth.
Spoon the batter to the already prepared moulds or paper cups.
Bake for 20minutes until a skewer inserted comes out clean.
Let them cool in wire rack.
Enjoy.
Notes:
You can frost or simply go for an icing to decorate this cuppies, but since i felt lazy, i skipped the frosting.
Even a simple ganache will works here.
Add fruits chunks,chocolate chips or any other fruit crushes as u desire to the batter to make different flavored cupcakes.
