Potato Roast (No Onion No Garlic)

Potatoes,this incredible vegetables are everyone's favourite at home. Potatoes are versatile and they can be cooked in many different ways, however my kids are ardent fan of this vegetable and they love to have the famous potatoes even everyday. Sometimes if i feel bored or dont have mood to cook the usual onion and garlic loaded potato roast i'll go for a simple,quick and definitely a delicious potato roast just with simple ingredients. Today's potato roast is completely onion and garlic free, yes you can make delicious potato roast without both onions and garlic. This potato roast tastes excellent as side dish especially with rasam and rice. However we love this no onion,no garlic potato roast with rotis too.

No garlic no onion Potato roast

Already cooked and cubed potatoes works well, but i'll go always for cubed raw potatoes cooked in hot water. This gives a prefect roast than the already cooked and mashy potatoes. With a mixture of spice powders, this roast will get ready in less time when compared to the usual potato roast. If you want a simple side dish to serve along with your rice dishes, just give a try to this no onion,no garlic potato roast. Am sure you will make this dish,definitely often in your kitchen.This potato roast is a bachelor friendly dish, even a kid can prepare with the help of an adult. An easy breezy side dish to enjoy.

Easy Potato roast, no garlic no onion potato roast

2nos Potatoes( peeled and cubed)
1tbsp Coriander powder
1/2tsp Red chilly powder
1/4tsp Garam masala powder
1tsp Fennel seed powder
Few curry leaves
Oil
Salt
Chopped coriander leaves

Bring boil enough water with salt, add in the cubed potatoes and cook until they turns soft, drain them in a colander. Keep aside.

Heat enough oil in a pan, fry the fenne seed powder and curry leaves.

Add the cooked cubed potatoes, salt, red chilly powder,garam masala powder, coriander powder and salt.

Roast everything in simmer until the potatoes gets well coated with the spice powders.

Dont close the pan with the lid.

Add in the chopped coriander leaves, toss everything well, put off the stove.

Serve hot as side dish.
