Peanut & Chickpeas Rice

Feeding a kid with healthy stuffs in their diet is definitely a hard task for most of the moms.I have crossed those days with many difficulties, now my kids are grown up and obviously they dont take that much interest to know how their mom cooked their foods. Mostly i'll try to add healthy stuffs in their dishes easily by masking them with their favourite ingredients along with. If its comes to baked goodies, i'll always goes for chocolates if its comes to their lunch or dinner i'll try to mask the healthy stuffs with some meats or seafoods in their foods.So they wont notice and will finish their food without any hassle. Packing a lunch to kid is an another tough task which i never ever had a chance to live as my kids come home for their lunch. However cooking food to kids is definitely a challenging one.I'll try to add veggies and legumes aka pulses,beans often in my kids foods. Most of my one pot meals or simply masala rice will definitely have beans in them as beans are loaded with proteins.Its advised to take beans often in our diet as beans will digest easily and suits prefect for any ages.

Nutty Chickpeas rice, Vegan Peanut Chickpeas rice

I picked Kids Delight-Nuts and Legumes for lunch box as theme for this week's blogging marathon. This rice is simply cooked and spiced with roasted peanut spice powder, you can prepare this peanut spice powder in advance and you can use them to make your rice dishes and side dishes easily with it.Coming to this quick rice, if you have cooked leftover rice and the peanut spice powder used in this rice already aside, you can finish preparing this rice within less than 15minutes, obviously you can also go for your choice of veggies and cooked beans, as anything works wonder for making this podi rice.Dont forget to serve this delicious,flavourful rice simply with chips or fryums.Check out the Blogging Marathon page for the other Blogging Marathoners doing BM#45. 


Nutty Chickpeas rice,  Peanut Chickpeas rice


2cups Cooked rice
1cup Cooked chickpeas/channa
1no Onion (chopped)
1/4tsp Turmeric powder
Salt
Oil
1tsp Cumin seeds
Few curry leaves

To roast & grind:
1tbsp Coriander seeds
1/4cup Raw peanuts
1tsp Peppercorns
1tsp Cumin seeds
2tbsp Dessicated coconut
5nos Dry red chillies

Roast and grind as fine powder all the ingredients given under the list 'to grind' and keep aside..

Heat enough oil in a pan, let splutters the cumin seeds and curry leaves, add the chopped onions,saute until they turns transculent.

 Add the cooked channa,salt,turmeric powder and cook in simmer for few minutes.

Now add the grounded spice powder as per need, cook again for few minutes..

Finally add the cooked rice, toss everything gently until the rice get well mixed.

Serve it with chips,papads or any spicy side dish..
