Beerakaya tomato Kura/Ridgegourd Tomato Curry

Beerakaya is the famous Ridge gourd in Telugu, usually i cook this beautiful vegetable often as dal,kootu,as chutney, or simply as a stir fry. While googling, i got hooked to this dal less tomato curry from Sailu's Beerkaya tomato kura. This Andhra style ridge gourd curry tastes extremely delicious, very simple to make.  Jaggery and fennel seeds used in this curry makes this curry more flavourful with mild sweetness. When served along with rice and papads, am sure everyone will have a satisfying meal, we loved this beautiful Andhra beerakaya tomato kura for our lunch and for dinner with rotis. This curry tastes even more delicious with simple chappathis.

Ridgegourd tomato curry, beerakaya tomato kura,Vegan tomato ridgegourd curry

2nos Ridgegourd (chopped as small pieces)
2nos Tomato (chopped finely)
1no Onion (chopped)
2nos Green chillies (slit opened)
1/4tsp Turmeric powder
1tsp Red chilly powder
1/4tsp Coriander powder
A pinch Fenugreek powder
1/4tsp Garam masala powder
1/4tsp Fennell powder
1/2tsp Jaggery powder
Chopped coriander leaves
1/2tsp Mustard seeds
4nos Garlic cloves (crushed)
Few curry leaves
Oil

Heat the oil, let splutters the mustard seeds, add the crushed garlic,curry leaves, saute for few minutes.

Add the chopped onions, slit opened green chillies, saute until the onions turns transculent,add the ridgegourd pieces, turmeric powder, cook in medium flame for few minutes.

Add the chilly powder, coriander powder,fennel powder, fenugreek powder, cook for few minutes.

Now add the chopped tomatoes, cook with lid closed for few more minutes,add enough water, salt,jaggery and garam masala, cook in high flame until the curry turns bit thick.

Add the chopped coriander leaves and put off the stove.

Serve warm.

  11. Coincidentally I made this chutney yesterday though it was another version. :) I have never seen a tomato - ridgegourd combo chutney and it sounds delicious.
