When i picked Cakes with different egg substitutes as theme for this week's blogging marathon, i know i'll be making a chocolate cake with avocado. Yes avocados works wonder in eggless cakes and you can add the avocado puree to replace butter in cakes. I have already tried couple of bakes with avocados however everytime i love to work with avocado puree in chocolate cakes. One of my recent trial with avocado is this vegan chocolate cake. Since avocado puree is used in this recipe, i used oil instead of butter. Also i used white vinegar and baking soda as egg substitutes in the cake as my theme of this week's blogging marathon.This vegan chocolate cake came out super moist and dense as well. The fat in this cake is just vegetable oil and avocado puree.None will notice the addition of avocado here until you reveal the secret ingredient.
Its peak season of avocado here, obviously i pulled myself to give a try to this beautiful vegan chocolate cake with avocado as this cake was in to do my list since a while. Give a try to this vegan version of chocolate cake,am sure you wont regret for it. Whenever i try something different from the routine cakes, i'll try to add chocolates to mask it, here also i did the same and i topped this vegan chocolate cake with a simple chocolate ganache just by heating the chocolate chunks and soyamilk in microwave oven. 2cups All purpose flour
1cup Avocado puree
2tbsp White vinegar
1tsp Baking soda
2tsp Baking powder
1cup Vegetable oil/Canola oil
1/2cup Hot water
1/4tsp Salt
1cup Sugar
1/2cup Unsweetened cocoa powder
1tbsp Vanilla extract
For Vegan ganache:
Chocolate chunks (per need)
1/4cup Soya milk
Sieve the flour, baking powder, baking soda,unsweetened cocoa powder, salt in a bowl, keep aside.
Whisk the avocado puree, vegetable oil, hot water, sugar,white vinegar, vanilla extract in a bowl, beat well until the sugar gets dissolved.
Now mix the wet ingredient to dry ingredient gradually with a spatula, dont over mix.
Pour the batter to the already prepared mould, bake for 25-30minutes or until a screwer inserted comes out clean.
Let the cake gets cool completely in a wire rack.
Heat the chocolate chunks and soya milk in a microwave safe bowl for 2minutes,whisk well.
Pour the ganache over the cake and spread it.
Serve with a cup of coffee.
