Kootu, this vegetable and dal baed gravy makes an excellent side dish if they are served along with rice. Whenever i cross a new version of kootu, i wont hesitate a second to give a try. During my India trip, i couldnt resist to collect few supplements we get with some weekly tamil magazines. While going through those supplements, i crossed the 30 varieties of kootu, immediately went through the book and got hooked to this purple cabbage kootu, this dish is quite easy to make. A spice mixture is prepared simply to flavor this kootu and this spice powder makes the difference from other kootus we make usually with the famous coconut,cumin and green chillies combination.An excellent dish to enjoy thoroughly with hot piping rice and pan roasted potatoes.
The interesting part of this kootu is you doesnt need onion or tomatoes but this dish goes for a simple spice mixture. Spices like cumin seeds,peppercorns, dry red chillies, coriander seeds, grated coconut and channadal are very much needed for making the spice powder. This spice mixture gives the flavor and thickness to the kootu and we had this kootu with both rice and rotis. Yes this kootu makes an excellent side dish with our rotis as well. This vegan kootu tastes more delicious when served with rice topped with ghee and papads.This post goes to CC Challenge of the month.
2cups Purple cabbage (chopped)
1/2cup Yellow moongdal (pressure cooked)
1/4tsp Asafoetida powder
1/4tsp Turmeric powder
1/2tsp Mustard seeds
1/2tsp Urad dal
Few curry leaves
Salt
Oil
To grind:
2tbsp Grated coconut
2nos Dry red chillies
1tsp Cumin seeds
1tsp Peppercorns
1tbsp Channa dal
1tbsp Coriander seeds
Dry roast all ingredients one by one until a nice aroma comes from.
Take everything in a mixie jar, grind as fine powder.
Heat the oil, let splutters the mustard seeds, urad dal, add the asafoetida powder, curry leaves.
Add the chopped purple cabbage, saute for few minutes.
Now add the cooked moongdal, salt, cook until the cabbage gets half cooked well.
Add the grounded powder as per need, cook until the kootu gets thickens.
Put off the stove.
Serve warm.
