Its been a while i want to bake something with fresh plums, this time when we went to our weekend farmers market, i grabbed a kg of pulpy plums from my usual fruit stall. Back home, we couldnt resist to those absolutely sweet and pulpy plums and had few just like that. Since i planned to make some muffins with plums, i kept few plums aside and prepared this beautiful looking plum muffins with butterscotch chips. Do you know i brought this butterscotch chips from India, they are dead cheap there and i got them along with few baking products which i carried all the way from India, i know am a crazy person when its comes to baking. However these chips stays simply prefect in fridge if they are conserved properly when stored in an air tightened bottle.Coming to this muffins, both plums and butter scotch chips works absolutely prefect in this cuties.
This plums and butterscotch chips muffins came out absolutely airy,spongy and fruity. Actually instead of making this muffins completely with all purpose flour, i halved the quantity with corn flour hence this muffins came out absolutely airy,very light and super spongy. Corn flour makes excellent cake with super airy texture however if you dont have or dont like to add cornflour in this muffin batter, just stick with all purpose flour, you can also replace butterscotch chips simply with chocolate chips if you want. You can skip the addition of butterscotch chips very well in the muffins, however all depends upon of your choice of ingredients. The addition of butterscotch chips gives an extra sweetness and flavor to this super spongy muffins and trust me these muffins vanished very quickly once its comes out of the oven. 1cup All purpose flour
1cup Corn flour
2nos Eggs
1cups Plums (chopped as tiny bites)
1/2cup Oil
3/4cup Sugar
1tsp Vanilla extract
1/4tsp Salt
1+1/2tsp Baking powder
1/4cup Butterscotch chips
Preheat the oven to 350F.Line a muffin tray with paper moulds,keep aside.
Sift the flours,baking powder,salt together and keep aside.
In an another bowl beat together the eggs,oil,sugar and vanilla extract until the mixture turns pale.
Now gradually add the dry ingredients to the wet ingredients and fold in plum bites,butterscotch chips,mix everything with a spatula.
Dont overmix the batter.
Spoon the muffin batter to the greased muffin tin , sprinkle some chips on the top and bake for 20-25minutes in middle rack of the oven.
Let the muffins cools completely.
