Eggless Lemon Curd Bars

Am running my first week of blogging marathon with an interesting theme, yes this week's theme is Lemon recipes, obviously this week's posts are prepared with lemon. After an Eggless Lemon Curd and some lemon and poppyseeds biscotti, am sharing this absolutely delicious Eggless lemon curd bars. Actually this bars goes for Lemon curd and with a simple butter,sugar and flour mixture for the crust. This bars are one among the easiest bars i have tried till now. If you have your lemon curd at home, you can make this bars in a jiffy. Trust me if you love citrus flavoured bakes then this bars are for you.Serve chilled,dusted with confectioner's sugar, anyone can have this bars happily after a heavy meal.

A prefect dessert to finish a lunch or dinner, however we had this bars for our snacks, my lil one who loved lemon curd very much went crazy after having this bars. To be honest, i even kept some bars aside in a secret place, as he want to finish everything, yes he just loved it. I prepared these bars as eggless, but still if you want to make them with eggs, just go on, however the crust for this bars doesnt need eggs, but lemon curd can be prepared with eggs if you want.Check out the Blogging Marathon page for the other Blogging Marathoners doing BM#46. 

Eggless Lemon curd bars

For the crust:
1+1/2cups All purpose flour
150grms Butter (soften)
3tbsp Sugar
1/4tsp Salt
Oil for greasing

Preheat the oven to 350F, line a 9 inch baking mould with baking paper, grease well with oil.

Meanwhile in a bowl, mix the flour, sugar, salt and butter and mix well to for a dough, just sprinkle milk if needed to make the dough.

Press the dough evenly to the already prepared mould, make sure no cracks and bake for 20-25minutes.

Now take the baked crust from the oven, pour the lemon curd mixture on the top and reduce the oven temperature to 300F.

Bake now for 25-30minutes.

Remove the tray from the oven, let it cool completely. Keep in fridge for 3hours or overnite before serving.

While serving, slice the bars as small squares and dust with confectioner's sugar.

Enjoy..
