Have you ever cooked beetroot with peanuts, if not you should definitely give a try to this combination.The sweetness of the beets mingle very much with the crunchiness and the nuttiness of crushed peanuts. Seriously until am trying this combination, i never knew that both beetroot and peanuts works simply prefect together in a dish. This dish is completely onion free and garlic free, if you are a follower of my space, you might have noticed that am running my second week of blogging marathon with No Onion No Garlic theme. After a fingerlicking Konkani curry,today am sharing this easy peasy side dish for both rice and rotis.
This stirfry takes hardly less time to get ready, just chopping may take some time, else you can make this dish in a jiffy. Apart from chopping the beetroots, you dont have nothing to chop. Obviously even a beginner can make this dish without anyone's help. Since i used raw peanuts, nothing to do with the peanuts as well. Just crush them coarsely and add them to the stirfry. How easy na, this stir fry makes an excellent side dish for rasam rice and definitely an prefect side dish for chappathis. You can make wraps out of this vegan stirfry to feed kids easily. 1/4kg Beetroot (peeled & cubed)
1/4cup Peanuts (crushed)
1tsp Redchilly powder
1tsp Coriander powder
1tsp Mustard seeds+urad dal
1/4cup Grated coconut
Salt
Few Curry leaves
2tbsp Oil
Heat oil in a pan, add the mustard seeds n urad dal,let them splutters.
Add the beetroot pieces, curry leaves, cook them for few minutes.
add the red chilly powder, coriander powder,salt and stir everything for a while;
add half a cup of water to the vegetables,cook everything until the water get evaporates.
Add the grated coconut,crushed peanuts, give a stir and put off the stove.
Serve them as side dish with any rice dishes or rotis...
