I have been looking for a chance to bake some lemon biscottis and finally i got a chance to make some as am running this week's Blogging marathon with Lemon recipes as theme for this week. We love double baked biscuits which is well known as biscottis from Italian cuisine. Actually biscottis makes an excellent evening snacks to enjoy thoroughly with a cup of tea or coffee. My lil one love simply any variety of biscottis as he like biscottis to the core. Obviously i dont need any excuses to bake biscottis whenever i feel like baking some, but somehow lemon biscottis was sitting in my to do list since a long. Finally i prepared them for this week's theme. Trust me, we couldnt stop munching these beauties with our favourite drink.
If am baking lemon based cakes or bakes, obviously i couldnt stop myself adding black poppy seeds, i dunno why i love to add black poppy seeds everytime in my lemon bakes.I got this biscotti recipe from here, when i was looking for a simple biscotti recipe i got hooked to this recipe, but my biscottis didnt came out as much as prefect like the original recipe, let me blame my knife but tastewise nothing to say as this biscottis came out absolutely incredible.Check out the Blogging Marathon page for the other Blogging Marathoners doing BM#46.
2cups All-purpose flour
1/4cup Butter (softened)
2tbsp Black poppy seeds
1tbsp Lemon zest
1/2cup White sugar
1/4tsp Baking soda
1/4tsp Baking powder
1/4tsp Salt
1no Egg
1no Egg white
2tsp Lemon juice
1tsp Vanilla
Coarse Sugar
Preheat the oven to 350 F.
Beat the butter on high for half a minute, add the sugar, baking soda, baking powder and salt.
Mix everything well, now add the egg, egg white, lemon juice, lemon zest and the vanilla.
Finally add the flour and poppy seeds and mix in.
With your fingers, bring everything to form a soft dough.
Half the dough and shape each piece as log.
Place the logs on a baking pan lined with baking sheet and sprinkle the coarse sugar.
Bake for 25 minutes or until a toothpick inserted comes out clean.
Let the logs cool for 10 minutes and then using a serrated knife cut on a diagonal into slices.
Place the slices cut side down back on your baking pans ,bake for a 10 minutes or until they are lightly browned.
Let cool and enjoy.
Lemon flavored biscotti sounds so good. Would love to have some.
