Earlier, for me pasta sauce is always a quick sauce with tomatoes but later i learned many and now i make excellent pasta sauces. Pasta, this word itself makes my kids happy, they can have pastas everyday and they never get bored of pastas. However we have pastas atleast twice or thrice a week. My today's recipe goes for Sugo Rosso, this sauce is called Red sauce which is prepared simply with fresh tomatoes and flavored with basil leaves,garlic cloves. This sauce is very quick to prepare, easy to dish out and delicious to enjoy with pastas.
Needless to say that this beautiful, very catchy red sauce is vegan and an excellent sauce for anyone as this sauce goes for simple ingredients.Avoid canned tomatoes and stick with redish plum tomatoes for making this red sauce. Fresh tomatoes cooked along with garlic cloves makes this gorgeous tomatoes loaded sauce, am running my first week of blogging marathon with pastas in different sauce. 1/4kg Plum tomatoes
5no Garlic cloves
3tbsp Olive oil
Salt
Chopped basil leaves/parsley leaves
Pepper powder or chilly flakes
Cook the tomatoes in a boiling water until the skin begins to split. Remove the tomatoes and drop them in ice water.
Remove the tomatoes from ice water and discard the tomato skin, cut the tomatoes and blend them bit coarse in food processor.
Heat the oil, add the chopped garlic cloves and fry until a nice aroma comes from.
Add the tomato puree, salt and cook the mixture until the sauce turns thick.
Remove the sauce and add the chopped basil or parsley leaves and pepper powder.
Let the sauce sit for few minutes before serving.
Serve warm with pastas.
