Peanut butter is my weakness, i can survive for many days with a bottle of peanut butter. After nutella, i cant live without peanut butter. Peanut butter have an important place in my pantry, whenever i ran out butter for making bakes, i'll go immediately with peanut butter. You can make delicious dishes out of this nutty incredible spread. One of my recent trial with peanut butter is this eggless but still a smooth and softy icecream. As i told this week is going to be an icecream week, after a very catchy carrot icecream, i couldnt stop myself to share this easy peasy peanut butter icecream i simply prepared with smooth peanut butter,condensed milk,crushed peanuts and cream. Just with these ingredients, you can make this icecream within few minutes, no cooking is need obviously you just need a hand beater to whisk this icecream.
No need of icecream maker as well. How easy na, yes this icecream goes for simple ingredients. Since i want to make an eggless version, i found that cream and condensed milk gives a prefect texture the eggless version of icecreams, trust me these two ingredients makes excellent icecreams without much efforts. This peanut butter icecream goes to this week's blogging marathon as am running with Icecream all the way as theme.

1cup Smooth peanut butter
1tsp Vanilla extract
2cups Sweetened condensed milk
1cup Heavy whipping cream
1/4cup Crushed salted peanuts
Beat the peanut butter and vanilla until smooth with a hand beater
Add a cup of condensed milk and the cream and whisk on low speed until everything gets well mixed.
Add the rest of condensed milk and the cream and continue mixing.
Cover and arrange in freezer for an hour.
Take the mixture in a blender and beat well for few minutes,fold in the crushed salted peanuts,pour it again in a stainless steel box and keep in freezer for overnite.
While serving, keep the box in room temperature for few minutes.
