Eventhough my today's recipe calls for fritters, they are not deepfried but something different from the usual deepfrying. Yes these zucchini fritters sounds as much as like pancakes. One of the easiest fritters you can dish out just in few minutes. These fritters are unbelievably easy to do, just grate zucchini, drain them completely with a cheese cloth and add in other ingredients to make a thick paste. Then just drop a tablespoon of fritter batter in a pan to cook as much as like pancakes. Flip the fritters,cook on both sides until they turns golden brown and serve with a spicy dip or else simply with cheese based dips.
These fritters are seriously very much low in calories, one of the best way to sneak zucchini and definitely a wonderful way to feed picky eaters. These fritters are very much nutritious. The best part of this fritters is you can serve them for Sunday brunch, or as snacks, even as appetizers or else simply for a light meal. 2cups Zucchini (grated)
1tsp Salt
1/4cup All-purpose flour
1/4cup Parmesan cheese
2no Garlic cloves( minced)
1no Egg( beaten)
1/2tsp Black pepper
2tbsp Olive oil
Place grated zucchini in a colander, add salt and gently toss to combine; let sit for 10 minutes.
Using a clean cheese cloth, drain zucchini completely.
In a large bowl, combine zucchini, flour, parmesan, garlic and egg,season with salt and pepper, to taste.
Heat olive oil in a large skillet over medium high heat.
Scoop tablespoons of batter for each fritter, flattening with a spatula, and cook on both sides until they turns golden brown.
Serve immediately.
