Chickpeas & Potato Open Sandwich

Sandwiches are definitely easy to make and very quick to dish out, you can make sandwiches with anything. A simple vegetable filling to a rich and fingerlicking filling, anything suits prefect to make sandwiches.My today's recipe goes for chickpeas & potato stuffing, but this sandwich is an open sandwich, you doesnt need two bread slices. Just a toasted bread slice is quite enough to make this nutritious,filling sandwich. You can feed easily anyone with this lipsmacking chickpeas and potato open sandwich. I went for an easy potato and chickpeas masala to top this open sandwich.

Chickpeas & potato open sandwich

This nutritious sandwich will definitely fill any hungry tummy within few minutes. To make this sandwich bit cheesy, i topped the chickpeas and potato filling with some grated cheese, i just served them without melting the cheese, if you want a melted cheesy topping dont forget to keep this sandwich in a preheated oven for few minutes. You can serve this sandwich for a lunch, else for a snacks, even served with some salads these fabulous open sandwich makes an excellent evening dinner. You have numerous choice to enjoy this healthy, filling and satisfying sandwich.This open sandwich goes for this week's blogging marathon, as am running with 'Special theme' as this week's theme and i picked chickpeas as this week's star ingredient.

Chickpeas,potato open sandwich

Few Bread slices
Grated cheese
Tomato Ketchup

For filling:
1cup Cooked potatoes (cubed & mashed slightly)
2nos Onions
2nos Tomatoes
2cups Chickpeas (cooked)
1tsp Ginger garlic paste
1tsp Red chilli powder
1/2tsp Coriander powder
1/2tsp Cumin powder
salt
Oil

Heat enough oil and fry the ginger garlic paste until they turns slightly brown, add the chopped onions and saute till transculent.

Add immediately the tomatoes, salt and cooking until the tomatoes turns mushy.

Now add the cubed and mashed potatoes,cooked chickpeas, red chilli powder, cumin powder, coriander powder, cook for few minutes.

Add a cup of water and cook everything until the filling turns thick.

Assembling:

Toast the bread slice in a toaster, drop enough filling and top it with cheese.

Drizzle the ketchup and enjoy warm.

  8. I handed over this recipe to the younger cooks who are invading the kitchen. Have to say in spite of the slightly burnt bread they gave me.... the flavour was amazing

  13. I'm a very sandwich-kind-of-a-person, especially when I'm eating alone. I love open sandwiches for their versatility. One can add anything from left over curry to chutneys and cheeses. I really like this fun combination of chickpeas and potato for a sandwich.
