Having muffins for breakfast will definitely fill a hungry tummy without much efforts, obviously i love to bake often muffins than cake or bread. Muffins are easy to carry that too when you are late to your work. Mango, this fruit is my favourite after pineapple and jackfruit. Obviously i love make variety of foods with this fruit. Anything baked with mango will surely satisfy my tastebuds. But this time, since i want to make a quick and easy breezy baked goodies, i opted for this egg free and completely butterfree mango muffins with tutti frutti chunks. Whoever love mangoes in bakes will definitely go crazy if they tastes this muffins.
Muffins, this individual size cake bites are very easy to prepare and bake if you dont feel like baking for hours. Since my today's muffins are completely egg free and butter free,you can bake these cuties with simple ingredients easily available in everyone's kitchen.Tinned mango puree works awesome to bake this muffins than with the fresh mango chunks as this muffins goes for mango puree. If you have mangoes abundantly, just stick with the fresh mango puree. Am running my first week of blogging marathon with Fruits in any form. As i used mango as puree in this eggless butterless muffins, these muffins are going to this week's marathon.
2cups All purpose flour
3/4cup Sugar
1tsp Baking powder
1/2tsp Baking soda
1/2cup Yogurt
1/2cup Oil
1cup Mango Puree
1tsp Vanilla extract
1/2cup Tutti frutti bites
Preheat the oven to 350F, line the muffin tray with muffin papers or muffin cups.
In a bowl, sift the flour,baking powder,baking soda and salt.
Meanwhile in a small bowl whisk together the sugar, yogurt,mango puree,oil and vanilla extract.
Pour the wet ingredients to the dry ingredients, whisk lightly. Dont overmix the batter.
Fold in the tutti frutti bites gently.
Spoon the batter evenly to the already prepared pan.
Bake for 20-25 minutes until a skewer inserted comes out clean.
Transfer to wire rack and cool it.
Carefully remove the muffins from the pan, cool completely.
Enjoy with your favourite drink.
