Kootu, this dal based thick gravy makes an excellent dish when served along with rice and papads. I can die for a plate of hot warming rice topped with a simple kootu and ghee served along with papads, my comforting food. So making kootu with different dals and vegetables been quite a routine at home. My today's recipe is one of the simplest and quickest kootu dish which i never fail to prepare atleast once a week with different vegetables. But today's post is going to be with Zucchini, this zero calorie vegetables are quite versatile and you can dish out many beautiful dishes out this squash. Usually i make kootu with pressure cooker but this time i cooked the yellow moong dal separately.
Zucchini blends very well with any dals, but somehow i like my kootu with yellow moongdal eventhough H like with channa dal.Not to forget that zucchini gets cooked very much easily, thats i went by cooking the dal separately before making this kootu. This way, you can get prefectly cooked zucchini pieces rather than having a mushy pieces. If you are following my blog, you might have noticed that am running the second week of blogging marathon with Lentils in 3ways as this week's theme. Since this easy breezy kootu suits prefectly for the theme, am posting this fingerlicking goodness as my third post of this week's theme.
3cups Zucchinis (cubed)
1no Onion (chopped)
1no Tomato (chopped)
1tsp Mustard seeds+cumin seeds
2no Dry red chillies
Few curry leaves
1/2cup Yellow moong dal
1/4tsp Turmeric powder
1/4tsp Asafoetida powder
Salt
Oil
Take the moongdal,asafoetida powder, turmeric powder together in a pressure cooker with enough water, cook upto 3hisses.
Heat enough oil in a kadai, let splutters the mustard seeds, cumin seeds, and fry dry red chillies.
Add immediately both chopped onions and chopped tomatoes with salt, cook until the veggies get well cooked.
Now add the cubed zucchinis to it, cook in simmer until the veggies gets half cooked. Add now the cooked dal to the veggies.
Bring to boil, put in simmer and cook until the veggies gets well cooked.
Serve with rice, idlis or dosas.
This kootu works out wonder even with pongal.
