Am an ardent fan of Indo Chinese recipes, whenever i get a chance to cook them, i dont hesitate a second to prepare them from scratch. One among the favourite Indo chinese dishes is schzewan fried rice. I do fried rice often but my today's recipe is completely a different one. Instead of usual vegetables, i tried my hands with chickpeas and trust me this nutritious schzewan rice came out simply awesome and everyone enjoyed thoroughly this dish. None at home missed the meat or egg in this rice. When served along with gobi fry, this schzewan chickpeas rice makes an excellent weekend dinner or lunch.

Potato Chop Chapathi Rolls
After a flavourful vegetable pulao, today am sharing an another interesting weekend dinner idea, yes my today's post goes for a kid's friendly chapathi rolls. Weekend menus have their important place in our place, i love to make different dishes especially during weekends as we are almost running like headless chicken during week days. Obviously kids dont ask me anything special as they dont have time to enjoy their food happily. Poor kids, they are always loaded with their home works, projects etc. Needless to say our weekend dinner or lunch is definitely the most privilege moment to spend together especially to have our food together. Ok let me stop my blabbering, lets go to today's chapathi rolls.My kids are ardent fan of wraps and rolls, they just love if i serve them anything with chapathi as rolls.

Vegan Mint Vegetable Pulao
Weekend lunch or dinner have their important place in our menu, yes weekend is always special especially when Hubby dear is at home. Coz he works two weekends in a month, obviously if he is at home, i'll plan to make his favourite lunch or dinner. He just love vegetable pulao very much with chicken fry. Since i dont want to make the usual vegetable pulao, this time i tried my hands with this aromatic pulao prepared simply with a spiced mint paste. The addition of this mint paste makes this pulao more interesting and flavourful. A simple one pot meal to make if you have mint leaves abundantly at home. Give a try to this pulao am sure you will definitely love it.

Wheat Vermicelli Kheer
During my last visit to Indian grocery, i grabbed a packet of wheat vermicelli as i want to make some upma with it. Back home, none want to have upma, obviously i dropped the idea of making vermicelli upma, then this packet of wheat vermicelli was sitting in my pantry for a while. Finally i opted to make this wonderful looking kheer with those thin wheat vermicelli. Trust me, this kheer tastes extremely good and none can find any difference between the usual vermicelli kheer and this healthy wheat vermicelli. Served chilled or warm, this kheer makes an excellent dessert after a meal or as a sweet for special occasions.
Creamy Potato Gratin
My kids are great fan of gratins, obviously gratins have their important place in our weekly menu. Since they love gratins with any vegetables, i do quite often with mixed veggies, but last week my younger one asked me for his favourite potato gratin with loads of cheese.Hence i prepared this alluring creamy potato gratin for our dinner. This gratin makes a super filling meal, when served with a grilled meat or grilled fish, you can have a wholesome and complete lunch or dinner. But i served mine with a simple salad and we had a super filling dinner.

Strawberry Yogurt Mousse
We are in spring here and obviously strawberries and raspberries are showing their heads in our nearby farmer's market. Needless to say none can resist to the beauty of these berries. I couldnt resist to their freshness, without any hesitation i grabbed a kg of super fresh strawberries and raspberries. Back home, kids enjoyed thoroughly with some whipped cream and H had his dose of strawberry salad.Finally with the leftover strawberries,i thought of making some syrup but i opted for an interesting chilled dessert.

Mango Granita
Granita is a semi frozen dessert made usually with sugar, water and various flavorings. Originally from Sicily its avilable now all over the world but in different forms. Granita is definitely related to Sorbet and Italian ice, however they have coarse and more crystalline like texture. Granita texture varies from coarse to smooth, it is always different from the one of an ice cream which is creamier, and from the one of a sorbet, which is more compact; this makes granita distinct and unique.

Eggless Chocolate, Mango Dessert
Have you ever combined chocolate and mango together in desserts, if not just give a try to this irresistible eggless dessert with mango and chocolate. This dessert goes for fabulous eggless chocolate mousse and for an eggless mango custard. Both served together makes an excellent dessert to enjoy after a feast. Eggless chocolate mousse is simply prepared with heavy cream, semi sweet chocolate chips while the custard is prepared with mango puree and custard powder. A super easy dessert to give a try if you want to serve your guests with a different dessert. Actually i was searching for a name to fit prefectly to this dessert but i couldnt able to get out a prefect name hence i named it simply as a dessert.

Eggless Mango Buttermilk Pancake
Pancakes, this tiny cakes are my younger son's favourite, he just love them with anything, obviously whenever i feel bored to make our South Indian breakfast, i'll go immediately with Pancakes. Pancakes are easy to make and you can make pancake batter with any ingredients. My today's recipe goes to this incredible mango pancakes. Mangoes are showing their heads in Indian shops and i couldnt resist to get some during my last trip to Indian grocery. Unfortunately they werent sweet but super sour, since they are quite expensive i couldnt want to trash them. I scooped their fleshes and turned them as puree which i used in making few dishes out of the homemade mango puree. One among those dish is this mango pancake.
