Peppered Mushroom Rice

Preparing a lunch box everyday is definitely a tough task to every mom, thank god that i never had such hassles in my life till now. Apart from packing foods for my better half i never had a chance to pack foods for my kids. However i will be posting some easy breezy,lunch box friendly dishes for this week's blogging marathon. My theme for this week's blogging marathon is Kid's delight - Lunch box in 30 minutes. And all my three dishes for this week's theme are going to be some simple dishes you can pack very well in your kid's lunch box as well. And am kick starting this week's theme with an easy breezy pepper flavored mushroom rice which calls for simple ingredients.

Anda Pudhina Pulao/Mint Egg Pulao

Pudhina pulao is quite an aromatic one pot meal to dish out with less efforts if you opt for a pressure cooker. Indian pressure cookers are real blessings if you want to dish out one pot meals easily and quickly. Today am posting a delicious, flavoursome rich and definitely an aromatic rice dish prepared with a spiced mint leaves paste along with already boiled and pan fried eggs. An easy pulao to dish out especially for weekend lunch or weeknight dinner. Served along with a simple raita or a delicious gourmet gravy, trust me this minty egg pulao will definitely please anyone's tastebuds easily. Since i cooked this pulao in pressure cooker, you can dish out this flavourful pulao in an ease even if you have sudden guests at home.

Gluten Free Mint Coconut Pulao/Vegan Pudhina Coconut Pulav

One pot meal are always our family favourite, i always look for Sunday to dish out varieties of one pot meal. And my mom is an expert of one pot meals, she do cook those dishes with different variations in an ease. My today's post is also one of her dish which i never fail to prepare whenever i ran out of meats. Sunday lunch is always special at home and kids look for meaty dishes for their lunch. Once in a while, i cant think more than dishing out a simple one pot meal like today's post. Mint and coconut pulao is definitely an easy breezy dish to prepare with less efforts. You can add any sort of vegetables or else simply with some handful of cashew nuts to turn this simple pulao as a healthy one pot meal.

Miriyam Pulihora/Pepper Tamarind Rice

I couldnt stop myself to grab a Ugadi friendly recipe from Hari Chandana's Space,as she shares some lovely collections of Traditional and creative special dishes for Ugadi. Am running this week's blogging marathon with Festivals of the month as theme. Hence i have prepared my posts specially for Ugadi though its not quite late to prepare this dish. Ugadi calls for many delightful dishes with ressembles very much the mixture feelings of life. Obviously Ugadi special foods calls for tanginess, sweetness, spiciness, sourness. When i looked for a different rice dish for this special day, i got hooked to this different but yet a tangy rice dish aka Pepper tamarind rice. The name itself tempted me a lot, obviously i couldnt stop myself to prepare them at home.

Vegan & Gluten Free Mexican Fried Rice

Fried rice, this word itself makes me hungry, am an ardent fan of Indo chinese fried rice, obviously if i cross any new variety of fried rice, i dont forget to bookmark it immediately. Recently Vaishali of Ribbons to Pastas posted an easy breezy Mexican fried rice, i immediately bookmarked it and tried it yesterday for our lunch. Its a simple, super quick, delicious, flavourful rice with bellpepper, corn kernels. If you have cooked rice aside, then this rice dish will take definitely less than 10 minutes to get ready. Thanks Vaishali for sharing this aromatic Mexican fried rice, we finished our lunch happily with some fryums.

Mushroom, Flat Beans Fried Rice

Weather is too hot here, obviously am trying to cook earlier in weekends as well as in weekdays. Since we are crossing the highest level of hot temperature for the past three days, obviously we are sticking to drinking more water and eating salads than having some solid foods. However if you have some hungry tummies around you to feed especially for weekday lunches, you have to stick with some easy breezy dishes to dish and serve them quickly. My today's dish is one among those easy breezy but yet a filling and healthy dish to serve with simple side dishes.

Vegan Rice Pudding

Rice pudding, this sweet dish is my daughter's favourite, she loves it very much. Whenever i feel like dishing out simple pudding, i will surely prepare rice pudding. And my today's recipe is a fantastic pudding which calls for easy ingredients. A can of coconut milk or freshly squeezed coconut milk, sugar and rice, these three ingredients is much needed to prepare this easy breezy vegan sweet. I simply flavoured this pudding with vanilla extract. If you want to make a rice pudding with an exotic touch, add some mango chunks or pineapple chunks depending upon your tastebuds. However my today's post is a simple and an elegant dessert to serve after a meal.

Horsegram Pulao/Kollu Pulav

Looking for a quick dish with healthy horsegram, dont forget to have a look at this lipsmacking pulao. Easy to make, this nutritious rice calls for easy ingredients and the humble 'Horsegram'. Kayi Sasive Anna/Mustard Coconut Rice

Kayi means Coconut and Sasive means Mustard in Kanada, hence Mustard coconut rice as this rice have these two ingredients as main ingredient to prepare this alluring rice. Usually prepared with already cooked rice, this mustard coconut rice makes an excellent main dish to serve along with fryums and boiled eggs. Paneer & Bellpepper Peppered Rice

This week is going to be lunchbox friendly dishes, yes i picked Kid's delight-Lunch box as theme for this week's blogging marathon. Lunchbox is always something special if your kids carry their lunchboxes prepared from home. Though i dont pack lunch for my kids i just love lunch box ideas, and this theme is always my favourite among many fantastic themes suggested by Srivalli,the brain child of blogging marathon. Lunchbox is always the best part of school life, obviously every mom need to pack lunch boxes with healthy ingredients in it. Paneer is one of most favourite Indian cheese among the kids, anything cooked with paneer goes directly to my kid's favourite too. Needless to say paneer based rice dishes makes everyone happy at home.

Vella Aval/Sweet RedRice Flakes/Avil

Aval aka rice flakes makes excellent snacks just with some grated coconut and sugar. My pantry will always have rice flakes, earlier i always get white rice flakes from stores but as a health nut am converting most of our usual dishes with healthy twist. Obviously instead of  getting white rice flakes nowadays i buy red rice flakes and you can make varieties of dishes out this healthy rice flakes. Today's recipe goes for a super easy evening snack. if you have jaggery syrup at home trust me this vella aval takes hardly few minutes to get ready.

Schzewan Chickpeas Rice

Am an ardent fan of Indo Chinese recipes, whenever i get a chance to cook them, i dont hesitate a second to prepare them from scratch. One among the favourite Indo chinese dishes is schzewan fried rice. I do fried rice often but my today's recipe is completely a different one. Instead of usual vegetables, i tried my hands with chickpeas and trust me this nutritious schzewan rice came out simply awesome and everyone enjoyed thoroughly this dish. None at home missed the meat or egg in this rice. When served along with gobi fry, this schzewan chickpeas rice makes an excellent weekend dinner or lunch.

Tomato Pulao

My kids are great fans of one pot meal especially anything with tomatoes, obviously i make quite often their favourite pulao with tomatoes but everytime i make i forget to click a picture to post it in my space. Finally i clicked few pictures just to write about our favourite easy breezy pulao. Tomato pulao gets ready very much easily if you make them through pressure cooker or else simply with a heavy bottomed vessel. Usually i go for pressure cooker method but this time i opted for a heavy bottomed pan and the pulao came out extremely delicious with prefectly cooked basmati rice.

Rajma & Spinach Pulao

One pot meal works awesome if you are lazy to cook or feel bored to cook an elaborate dish. However we dont need any specific reason to cook one pot meal. Obviously i love to make quite often some easy peasy one pot meal just to feed quickly my family especially my H as he carry his lunch with him. One pot meal can be prepared in a jiffy if you are making them through pressure cooker. Pressure cookers are life saver, this vessel is quite enough to make quickly some fabulous pulaos if you are planning to make for your lunch or else something special or quick for your sunday brunch.

Spinach, Chickpeas Masala Rice

Masala rice is a kind of fried rice, prepared simply with rice and varieties of vegetables which is spiced just with variety of spice powders. Kids love rice dishes, especially for their lunch. Obviously we South Indians pack most of our kid's lunch box with rice dishes. Variety of rice dishes do exists and kids love to carry in their lunch box. Just add some vegetables, greens in a simple rice and make it more healthier. My today's recipe is one among those healthy version of rice dish i never fail to make at home whenever i feel lazy or bored to cook. Today's recipe is simply prepared with few chopped carrots, chopped spinach greens and cooked chickpeas. Adding chickpeas makes this rice more nutritious and gives a healthy twist as well. Pack this colourful rice simply with fried potatoes or boiled eggs,am sure you will definitely see the empty lunch box.

Peanut & Chickpeas Rice

Feeding a kid with healthy stuffs in their diet is definitely a hard task for most of the moms.I have crossed those days with many difficulties, now my kids are grown up and obviously they dont take that much interest to know how their mom cooked their foods. Mostly i'll try to add healthy stuffs in their dishes easily by masking them with their favourite ingredients along with. If its comes to baked goodies, i'll always goes for chocolates if its comes to their lunch or dinner i'll try to mask the healthy stuffs with some meats or seafoods in their foods.So they wont notice and will finish their food without any hassle. Packing a lunch to kid is an another tough task which i never ever had a chance to live as my kids come home for their lunch. However cooking food to kids is definitely a challenging one.I'll try to add veggies and legumes aka pulses,beans often in my kids foods. Most of my one pot meals or simply masala rice will definitely have beans in them as beans are loaded with proteins.Its advised to take beans often in our diet as beans will digest easily and suits prefect for any ages.

Eggplant Biryani/Kathirikkaai Biriyani

Sunday lunch, it will always goes for something rich and definitely for a one pot meal. We have almost every sunday, biryanis prepared either with meats, seafoods or else simply with vegetables. If its comes to vegetarian briyani i'll usually go for mixed vegetables biryani, but this time for a change i prepared this wonderful looking eggplant birynai as i want to make something different from the usual ones. This eggplant biryani goes for all the spices we usually go for making non vegetarian briyanis.Biryanis, this one pot meal suits prefectly to anyone's lunch. Obviously one can carry this flavourful dish in their lunch box with a simple side dish.

Sakkaravalli Kizhangu Kaara Kari/Sweet Potato Spicy Fry

You may wonder why am posting quite often recipes with sweet potatoes, its  a peek season of sweet potato here, obviously am cooking with this incredible veggies quite often in my cooking. Today's recipe is a super simple fry, which my mom usually make with potatoes. This incredible spicy fry aka kaara kari goes awesome as side dish along with sambhar,rasam or else with curd rice. This kaara kari takes hardly very much less time to get ready, you can make this delicious fry just within few minutes if you have already cooked sweet potato chunks.

Egg Vegetable Rice

A quick,simple and prefect lunch box dish is this egg vegetable rice. If you have leftover cooked rice already this colourful egg rice will gets ready in a jiffy. This rice suits prefectly for any ages as they are spiced mildly just with pepper powder. If you want this egg rice to be more spicy and flavourful, some garam masala will make the magic. My mom makes this rice quite often for my sister's lunch box when she was doing her engineering and everytime i'll wait for my share to enjoy for my lunch, coz i dont carry lunchbox to my college.

This easy egg vegetable rice is my daughter's favourite and i'll do atleast twice a month whenever i feel lazy to cook or else my daughter asks for. If you want to make this more interesting,you can also add some cooked,shreded chicken or else simply add some cooked soya nuggets.
