Chocolate truffles are bite-sized chocolate confectionery made traditionally with chocolate and warm cream. Yes chocolate ganache coated with melted chocolate, cocoa powder or chopped toasted nuts are fondly called as chocolate truffles. Shaped usually as spherical, conical or curved shape, these chilled chocolate cream are just prefect to enjoy during Christmas. Not to forget that, truffles are must in our Christmas dinner table as these chocolate confectionery makes a fabulous dessert after a festive meal. Truffles, this chocolate treats got their name as they ressembles as much like the edible fungus which is called as truffles. Varieties of truffles do exists, my favourite is always French chocolate truffles which is made with fresh cream and chocolate, once chilled, they are rolled in cocoa or nut powder.

Old Fashioned Peanut Brittle
Brittle is a kind of confection made with broken pieces of hard sugar candy with nuts like pecans, almonds or peanuts. These brittles have their own place especially in Christmas friendly candies list. Varieties of brittles exists if you go through google. I seriously want to make some old fashioned style of Peanut brittles since a while. When i picked Christmas candies as theme for this week's blogging marathon, i gathered all the ingredients to give a try to some Old fashioned aka grandma's style peanut brittles. Usually prepared with a hard sugar candy, old fashioned brittle calls for baking soda to bring a nice honeycomb like texture to this candies. Its quite a real fun to see the way the sugar syrup gets changed in colour once the baking soda is added to them. I seriously enjoyed making this extremely delicious peanut brittle for this week's theme.

Sorakaya Verusenaga Nuvvula Kura/Bottlegourd Curry with Peanuts & Sesame Seeds
Am a great fan of both bottlegourds and peanuts, obviously if i get a chance to cook with these ingredients how can i hesitate a second to cook with. My today's dish is a delicious Andhra style bottlegourd curry which i crossed here long back and i bookmarked it immediately.. A lipsmacking curry to relish hot with some rice and papads, we loved this super nutty curry very much. Though the main ingredient for making this recipe is bottlegourd, both peanuts and sesame seeds paste is a must to cook this curry which turns this dish more delicious with a fantastic aroma.

Dark Chocolate Almond Fudge
Fudge, these dangerously addictive toffee like chocolate bites are my kids most favourite. Obviously whenever i get a tin of sweetened condensed milk, i dont forget to dish out some fudges with it. Yes sweetened condensed milk is a must if you want to prepare your fudges easily at home. Though i have already tried couple of fudges, i couldnt stop myself to post this easy breezy dark chocolate fudge with almonds. Adding almonds to this fudges make this bites more crunchy and delicious. However fudges can be prepared with varieties of nuts or else as nutless. Its all depends upon you and your tastebuds. We love crunchy and chewy fudges hence i have added nuts in it.

No Bake Peanut Butter Pie
No bake desserts are extremely delicious and really very easy to dish out when you dont have oven at home. My kids are ardent fan of peanut butter and i have been looking for a chance to dish out a pie with it. When i picked 'Kid's delight- Anniversary Party' as theme for this week's blogging marathon, my mind went immediately to prepare some no bake pie.Obviously i gathered all the ingredients for preparing this delicious peanut butter loaded pie and finally here comes this lipsmacking no bake pie. Very easy to make, you doesnt need any special gadget to prepare apart from a springform pan which helps a lot for demoulding this incredible pie.

Empanadas are most favourite pastry of Latinos. Every country have their own variation of this fantastic pastry. Though savory empanadas are well known for many of us, sweet empanadas do exists and they will definitely satisfy anyone's sweet tooth. Empanadas are the Spanish style of hand-pie or turn overs. Am posting this luscious kheer for this week's blogging marathon as i picked 'Triple the dose' as theme. This kheer calls for three nuts and this combination of these three nuts works awesome for making this fabulous vermicelli kheer. Though this kheer calls for simple preparation, the final result was an excellent,super delicious and delightful vermicelli kheer. Instead of soaking the nuts, i went with microwaving the nuts with enough water to peel easily their skins.

When i picked Diabetic friendly sweets as this week's theme for blogging marathon, i couldnt resist to dish out a simple and diabetic friendly kheer. Yes my today's post calls for both rolled oats and palm jaggery syrup,when cooked together this two incredible ingredients makes an excellent kheer to relish without any fuss. Fortunately everyone at home just love kheer especially with rolled oats. Moongdal, Palm Rock Candy Sugar Laddoos/Pasiparuppu Panakalkandu Laddus
I have been posting beautiful diabetic friendly sweets for this week's blogging marathon as i picked Diabetic friendly sweets as theme for this week. After some fabulous steamed sweet dumplings aka kozhukattai, my today's post calls for yellow moongdal aka pasiparuppu. Instead of sugar, i opted for palm rock candy sugar and this healthy rock candy works awesome for making this incredible laddoos. Actually i was bit skeptical to give a try to this laddoos as i dont know how the final result will be. However i dont want to give up and dished out these beauties. Trust me, we just loved this healthy laddoos.

Coconut Almond Laddoos/Vegan Coconut Laddu with Almonds
Almond and coconut works awesome in most of the bakes, though you can make many ultimate desserts and sweets with this incredible ingredients.I have been looking for making a sweet of this combination and finally i did some sweet balls aka ladoos for my kid's snack box. Trust me, grated coconut and whole almonds have excellent nutritional values and they are advised to take atleast twice or once a week in our diet. Though you can dish out many delicious foods out of it, this sweet balls are seriously very easy to make, no roasting nothing is needed to make this fantastic healthy balls. I used dessicated coconut, whole almonds to make this beauties,once grinded you can just roll them as balls and enjoy them.

Eggless Walnut & Dates Atta Cake/ Eggless Wheat Cake with Walnuts & Dates
Atta cake, this recipe calls for whole wheat flour aka atta, the flour we usually use for making rotis. This cake is eggless, butterless and i used condensed milk,dates puree to replace the egg and oil for butter. Apart from it this cake goes for simple and usual ingredients easily available in your pantry. I have added walnuts to give a nutty texture to this simple cake. You can add tutti fruity bites, chocolate chips or else more nuts as per your desire. However adding chocolate chips will definitely make this cake very interesting. Since i want to feed my kids with dates, i prepared a simple puree with dates cooked in water, if you dont have dates just replace it with apple puree.

Honey Peanut Butter Sauce
Though many varieties of store bought sauces do exists, nothing can beat the freshly home made, preservative free sauces to enjoy with fritters or with finger foods. Homemade sauces are easy to make some sauces even goes for no cooking, just whisk the ingredients which you need to make a quick sauce and your sauce is ready to relish with your favourite food. My today's recipe is one among the easiest sauce i have prepared at home. Just with 5 ingredients is needed to dish out this nutty and mildly sweet sauce. This sauce makes an awesome accompaniment with raw vegetable sticks,fried samosas or spring rolls else simply to drizzle over your salad if you like peanuts in your dressing.

Maladu/Maa Laddoo/Pottukadalai Laddoo
South Indians makes couple of easy breezy laddoos quickly with dals and semolina. After the popular rava laddoo aka semolina laddoos, they do exists different dal based laddoos. My today's recipe goes for Maladu aka pottukadalai laddoo, pottukadalai is roasted grams which we usually make chutney out of this grams. This maladu goes for just five ingredients and you can make this laddoos in a jiffy. Maladu makes an excellent sweets to serve even to sudden guests as this lipsmacking laddoos are very much quick to make. The main ingredient for making this laddoo is melted ghee, the addition of ghee in this laddoo makes this maladu more tastier than the usual easy laddoos in which people use milk instead of melted ghee. However making this fried gram laddoos using melted ghee atleast once a while will definitely satisfy everyone's tastebuds.

Gulkhand Rava Sheera/Gulkhand Sooji Ka Halwa
I have couple of posts sitting in my draft and seriously i want to clear some as soon as possible coz my hard disc is getting tired of having all those pictures. Nowadays am getting very busy and obviously am so lazy to cook and click, thank god to all these posts sitting in my drafts. One among those posts is this Gulkhand Rava sheera, sheera is nothing our own Kesari. You can dish out kesari within few minutes and this dessert go usually for easy cooking. Semolina, sugar, ghee and nuts is quite enough to whip out this lipsmacking rava sheera, some add fruits while others add saffron or food colour to give an attractive colour to this simple dessert.

My today's recipe sounds almost like Bharwan baingan, the famous stuffed eggplant curry. But my version is definitely an easiest one, you can prepare this whole brinjal fry within few minutes, no grinding, no chopping and no sauting for hours. Just a simple spice mix makes these incredible looking brinjal fry. Actually this recipe goes for just three ingredients eventhough oil and salt is used in this fry. These whole brinjal fry is going to be a part of this week's blogging marathon and the theme is Just 3 ingrdients, as per rule Sugar, salt and oil are not considered as one among the three ingredients we can use.So this whole brinjal fry suits prefect for the theme.

Eggless Peanut Butter Icecream with Crushed Salted Peanuts
Peanut butter is my weakness, i can survive for many days with a bottle of peanut butter. After nutella, i cant live without peanut butter. Peanut butter have an important place in my pantry, whenever i ran out butter for making bakes, i'll go immediately with peanut butter. You can make delicious dishes out of this nutty incredible spread. One of my recent trial with peanut butter is this eggless but still a smooth and softy icecream. As i told this week is going to be an icecream week, after a very catchy carrot icecream, i couldnt stop myself to share this easy peasy peanut butter icecream i simply prepared with smooth peanut butter,condensed milk,crushed peanuts and cream. Just with these ingredients, you can make this icecream within few minutes, no cooking is need obviously you just need a hand beater to whisk this icecream.
