Vegan Dark Chocolate & Almonds Truffles

Chocolate truffles are bite-sized chocolate confectionery made traditionally with chocolate and warm cream. Yes chocolate ganache coated with melted chocolate, cocoa powder or chopped toasted nuts are fondly called as chocolate truffles. Shaped usually as spherical, conical or curved shape, these chilled chocolate cream are just prefect to enjoy during Christmas. Not to forget that, truffles are must in our Christmas dinner table as these chocolate confectionery makes a fabulous dessert after a festive meal. Truffles, this chocolate treats got their name as they ressembles as much like the edible fungus which is called as truffles. Varieties of truffles do exists, my favourite is always French chocolate truffles which is made with fresh cream and chocolate, once chilled, they are rolled in cocoa or nut powder.

Old Fashioned Peanut Brittle

Brittle is a kind of confection made with broken pieces of hard sugar candy with nuts like pecans, almonds or peanuts. These brittles have their own place especially in Christmas friendly candies list. Varieties of brittles exists if you go through google. I seriously want to make some old fashioned style of Peanut brittles since a while. When i picked Christmas candies as theme for this week's blogging marathon, i gathered all the ingredients to give a try to some Old fashioned aka grandma's style peanut brittles. Usually prepared with a hard sugar candy, old fashioned brittle calls for baking soda to bring a nice honeycomb like texture to this candies. Its quite a real fun to see the way the sugar syrup gets changed in colour once the baking soda is added to them. I seriously enjoyed making this extremely delicious peanut brittle for this week's theme.

Kandi Sunnundalu/Toor Dal Laddoos

Once again am sharing Hari Chandana's dish which i seriously want to give a try. Yes my today's post is Toordal Laddoos, i know many of you might wonder how laddoos can be prepared with toor dal. Even i was as much as like you guys. But after dishing out this laddoos my vision was completely a different one. If you love moongdal laddoos, then you will definitely enjoy this laddoos. The secret behind making a prefect aromatic laddoos is to dry roast the toor dals with much care and patience. Nicely dry roasted toor dal gives a fabulous flavor and i enjoyed it while roasting.

Kesari, this Indian semolina pudding have their own place in most of the celebration, festival or else for special occasions. Obviously if i pick an interesting theme like Festival of the month for this week's theme for blogging marathon how can i skip making kesari. I want to showcase Ugadi festival as the festival of this month. Ugadi is New year day of Hindus of Karnataka, Maharashtra, Andhra Pradesh and Telangana states of India.And this year Ugadi was celebrated on 18th March, though its late to post i couldnt stop myself to post Ugadi special dishes. For the first day of this week's blogging marathon, i couldnt stop myself to post this fantastic Coconut loaded rava kesari for this special occasion.

Jaggery Phirni

Phirni/Firni is a delectable creamy dessert which is completely gluten free. Its a super easy dessert which is a must in Northern part of India especially during festivals. Phirni is prepared with soaked and grounded rice, cooked in milk and sweetened with sugar. Its quite a fabulous delightful dessert to serve after a meal which makes a prefect sweet dessert to enjoy or else to enjoy with your near ones during a festival.

Carrot, Rock Candy Halwa/Carrot Kalkandu Halwa

Rock Candy/Sugar Candy is known as Kalkandu in Tamil. Usually used in many traditional Tamil sweet, these sugar candy have their important place in most of the South Indian's pantries. One of the traditional dish prepared with rice and sugar candy is Kalkandu Pongal. When i picked 'No Bake desserts' as theme for this week's blogging marathon, initially i want to go with no bake cheesecakes. Since am in summer cleaning process, i want to finish few ingredients sitting in my pantry for a while. Obviously i used sugar candies for making a delicious carrot halwa to stick with the theme.

Vegan Rice Pudding

Rice pudding, this sweet dish is my daughter's favourite, she loves it very much. Whenever i feel like dishing out simple pudding, i will surely prepare rice pudding. And my today's recipe is a fantastic pudding which calls for easy ingredients. A can of coconut milk or freshly squeezed coconut milk, sugar and rice, these three ingredients is much needed to prepare this easy breezy vegan sweet. I simply flavoured this pudding with vanilla extract. If you want to make a rice pudding with an exotic touch, add some mango chunks or pineapple chunks depending upon your tastebuds. However my today's post is a simple and an elegant dessert to serve after a meal.

Bread Kaja/Fried Sweetened Bread Slices/Fried Bread Slices in Sugar Syrup

I have been looking for an easy breezy desserts or sweets especially for the theme of this week's blogging marathon. Yes my theme for this week's blogging marathon is 'Vegan Sweets'. Though i had few vegan sweets in my mind, accidentally i crossed this bread kaja in Instagram. And this recipe is from Blend with Spices, Hari Chandana shared this recipe's click in Instagram and immediately i fell in love with this incredible bread kaja. Obviously i immediately went through the recipe, and that this sweet is completely vegan. How can i resist to this incredible sweet, my sweet tooth was actually craving for something crispy and sweet, without any hesitation i gathered all the ingredients immediately and prepared this kaja to served as dessert after our sunday meal.

Coconut burfi, this is my all time favourite sweets and nothing can beat the taste of this simple sweets. Whenever my sweet tooth crave for some sweets, i dont hesitate a second to dish this incredible burfi. If you check my blog, you may notice that i have already tried couple of versions of Coconut burfis. My love for this sweets pulled me to dish out some impossible versions of coconut burfis and my today's post is one among those unimaginable version. Actually my today's recipe is completely vegan and gluten free. Trust me this incredible sweet will definitely please anyone's tastebuds as this sweet is completely quick and easy to dish out.

Buñuelos Mexicanos/Mexican Buñuelos

Buñuelos Mexicanos is a popular fritters prepared during Christmas and New year's day. Though Bunuelos do exists as round balls, this flat shaped fritters are a sort of street foods in Mexico served along with hot atole and tamales to keep warm during their festive shopping. These Buñuelos are  light, crispy and round disc once deepfried are sprinkled with cinnamon-sugar or else served with piloncillo syrup. These bunuelos is definitely a very easy breezy fritters to prepare with less efforts. Strawberry Chocolate Custard

A simple sweet or dessert is quite enough to celebrate an occasion na, and my today's post is definitely one among those simple sweet or dessert to give a try if you dont have an idea of cook up something new. My today's post calls for very easy and simple ingredients, a couple of ingredients like custard powder, chopped chocolate, sugar and milk is very much needed to dish out this custard. Though i prepared this dessert with Strawberries, you can dish out this same fabulous dessert with any sort of fruits or else with a lovely medley of tropical fruits, its all upto you. Since strawberries started showing their heads in farmer's market, i didnt hesitate a second to grab some juicy,succulent strawberries. Obviously i cant think any other fruits than strawberries to add in this simple trifle like dessert.

Shing Paak/Gujarati Peanut Burfi/Mandvi Paak

Peanut chikki aka brittles, i have rarely seen someone saying no to those sweet bites. When its comes something to dish out sweet with peanuts, everyone at home love to enjoy them. When i was planning for something different to cook with peanuts, i couldnt resist to dish out this easy breezy Shing paak aka Gujarati Peanut burfi.This recipe calls for just three ingredients, yes roasted peanut powder, sugar, cardamom powder and nuts (optional) to decorate. This fantastic Gujarati sweet gets ready very much quickly than you can imagine.Easy to put together, this shing paak have a subtle flavor and definitely this sweet will please anyone's sweet tooth. Shing means peanuts in Gujarat and this Shing paak is a delicious nutritional sweet with wonderful flavor in it.

Mango,Semolina & Coconut Halwa /Mango Suji Sheera with Coconut

Mango, the King of fruit is our family favourite fruit and whenever i get this fruit, i dont hesitate a second to prepare some fantastic dish out of this fruit. Kesari aka Suji halwa which is well known as Semolina pudding is one among the most traditional Indian sweets which is quite often prepared for any occasion quickly as this dish asks for some easy preparation. This lipsmacking semolina pudding is one of our family favourite and my better half love this kesari aka halwa to the core. Since i want to prepare a different version of this pudding, this time i prepared mine with fresh mango puree, dessicated coconut flakes with roasted semolina. Initially i was bit skeptical to try this coconut and semolina combination, but trust me the final result was definitely a droolworthy pudding.

Chocolate Coconut Peda/Chocolate Dhoodh Peda/Chocolate Coconut Milk Fudge

Pedas, this milk sweets are easy to dish out if you have mawa or crumbled paneer at home. Since ever i tried milk sweets with chocolate flavor, my kids were pestering to make some pedas with chocolate. Obviously i couldnt stop myself to prepare some quick pedas with paneer at home. Very easy to make this peda calls for some dessicated coconut as well, however freshly grated coconut works awesome as well. But i was quite skeptical to use fresh grated coconut and went with dessicated coconut. Though i used 2 tablespoons of coconut flakes, this peda tastes fabulous with mild chewy texture coz of the coconut flakes.

Kashmiri Phirni/Kong Phirin/Kashmiri Semolina Pudding

Phirni is a delectable dessert prepared with rice as the main ingredient. Traditionally phirni is prepared on special occasions like Diwali, Holi, Karwa chauth and Ramazan etc. Coming to this fantastic Kashmiri Phirni, this pudding calls for semolina though many Kashmiri phirni calls for rice.This dessert has a super thick creamy texture and tastes absolutely delicious when served chilled. Kong means saffron and Phirin means sweet pudding. This semolina pudding calls for milk and khoya, which turned out this ultimate pudding more delicious and highly irresistible. Whoever loves Milk based sweets, will definitely fell in love with this beautiful pudding.

If you are looking for a super nutty, delicious vermicelli kheer, then this post will definitely tempts you to give a try. Am posting this luscious kheer for this week's blogging marathon as i picked 'Triple the dose' as theme. This kheer calls for three nuts and this combination of these three nuts works awesome for making this fabulous vermicelli kheer. Though this kheer calls for simple preparation, the final result was an excellent,super delicious and delightful vermicelli kheer. Instead of soaking the nuts, i went with microwaving the nuts with enough water to peel easily their skins.

Khichdo - Gujarati Cracked Wheat Sweet

My love for Gujarati cuisine, pulled me again to make a lipsmacking cracked wheat based sweet from this cuisine. Khichdo, an excellent delicious Gujarati sweet dish i have prepared recently for an occasion at home. This fabulous kheer like sweet is prepared in Gujarat during festivals like Makar Sankranti (Uttarayan-a kite festival).  This sweet is prepared specially for this festival which is eaten later and shared with the loved ones and relatives. Its quite a traditional dish and this dish calls for cracked wheat, milk with dryfruits. Some add channadal or toordal or else a combination of these two dals along with cracked wheat. Since i want to give a try with both dals, i went with both channa dal and toor dal. This sweet is a nutritious dish which is served along with peanut chikki and brinjal sabji for Uttarayan special.
