Cheese Potato Calzone

Calzone, this popular Italian oven baked folded pizza which is well known all around the world, as this folded pizza are very easy to make. I have already baked couple of calzone with different stuffing. However my today's post goes for a different and dangerously delicious calzone which is simply stuffed with a herbed and spiced potato chunks. The stuffing calls for a super simple preparation. Yes cooked and mildly mashed potatoes when spiced with some chilly flakes,salt, olive oil and chopped parsley leaves is quite enough to prepare the filling. No sauteeing is needed. Sundried Tomatoes & Rosemary Pasta

Sicily, one of our recent favourite island. Yes we had a fantastic summer vacation there and came back home with loads of beautiful memories. Do you know Sicily is quite popular for their citrus fruits and sun dried tomatoes. Obviously before leaving to Paris, we couldnt hesitate a second to grab some sun dried tomatoes and lemon liquor aka Limoncello with few more herbs which are quite famous in Sicily. Back home, i seriously waiting for a chance to give a try to one of the pasta dish we have tasted during our vacation. Though the pasta we had went for loads of cream and cheese, i went for the low fat version, but adding milk and parmesan cheese.

Vegetarian Bolognese Calzone/Vegetarian Ragu Alla Bolognese Calzone

Calzone is an Italian baked folded pizza which have its origin from Naples, Italy. A typical calzone is made with a yeasted bread dough, baked in oven stuffed usually with meats and cheese. However many variations of calzone do exists with different stuffings. Though some small calzones are fried in olive oil, baking calzone is quite popular. Calzone dough ressembles as much as like pizza dough however many recipes of calzone are prepared with usual pizza dough. Calzones are usually stuffed with cheeses like ricotta, mozzerella, parmesan and else with local cheese. My today's calzone goes for a vegetarian version, which makes a prefect meal when served along with some salads or else for an evening snacks with a cup of tea of coffee. You have numerous choice to serve and enjoy this ultimate calzone.

Vegetarian Bolognese Sauce/Vegetarian Ragu Alla Bolognese

Bolognese sauce is a popular Italian sauce which is also known as Ragu alla bolognese or simply ragu is a meat based sauce originated from Bologna, Italy. Hence this sauce got its name as Bolognese sauce, this sauce is cooked usually by slow cooking though this dish asks for several cooking techniques. Usually served with tagliatelle pasta, this meaty sauce makes an excellent sauce to enjoy with pasta. But my today's recipe goes for a delicious Vegetarian version and completely vegan as well.Am not a vegetarian but i dont cook red meat especially beef. Obviously this vegetarian version is definitely a great alternative for this sauce lovers. When i went through google, i saw many versions of this vegetarian sauce, i finally decided to go with my own way of preparing this vegetable loaded sauce.

Soyakheema Pizza Pinwheels

Making pizza at home is definitely an interesting one as this pizza dough doesnt need any specific ingredients to get ready, usual basic ingredients makes pizza dough. And this dough takes very less time to get ready though the resting time depends upon the weather and the humidity. I have baked this soya kheema stuffed pizza pinwheels for a weekly baking event few weeks back, but unfortunately i couldnt write a post before the deadline. Obviously this pizza pinwheels were sitting in my draft for a while. Finally am writing this post today as am running 13 days of baking for this month of december. Yes Bake a thon happens every year during the month of december and we fellow bloggers run this baking marathon thrice a week.

Spaghetti & Vegetable Pancake

As i told earlier,my kids just adore pastas in any form. Serve them anytime of the day with pasta they will never says no. After making a simple and super creamy pasta in mug, my today's post goes for an another interesting and definitely a kid's friendly dish. Yes my today's recipe goes for spaghetti pancakes. Very quick to make with simple ingredients. This pancakes goes usually for cooked spaghetti along with parmesan cheese and egg, since i want to feed my kids somehow healthy, i couldnt stop myself adding some grated carrot, celery and zucchini to make this delicious spaghetti pancake more colourful,catchy and healthy as well.

Cheesy Alphabet Pasta in a Mug

Pasta, this word itself makes my kids happy, they can have pasta everyday without any fuss. Dunno why they go crazy if i says pasta for today's lunch. Obviously i'll cook pasta atleast twice a week at home and serve with different sauce or else simply some baked dish with pastas. Earlier if i make pasta for lunch or dinner, i'll keep aside a bowl of rice for me as i dont like pastas that much. But i think nowadays its not a big deal for me to have pastas as am trying to like them as much as like my kids. For three days of this week's blogging marathon, i'll be posting three different kid's friendly pasta based dishes as i picked Kid's delight - Pastas for kids.

Mango Granita

Granita is a semi frozen dessert made usually with sugar, water and various flavorings. Originally from Sicily its avilable now all over the world but in different forms. Granita is definitely related to Sorbet and Italian ice, however they have coarse and more crystalline like texture. Granita texture varies from coarse to smooth, it is always different from the one of an ice cream which is creamier, and from the one of a sorbet, which is more compact; this makes granita distinct and unique.

Garlic Cream Sauce

After rice, pastas have their important place in our daily menu. My kids devour pastas with anything, even just with ketchup. However i dont forget to make couple of sauces to enjoy with. From Marinara sauce to White sauce, sauce for pastas may goes for many different variations and for easy preparation. My today's recipe goes for an excellent, very creamy and garlic loaded sauce. This sauce need just garlic cloves, all purpose flour and fresh cream which is spiced simply with salt and pepper powder.This sauce goes awesome with pastas else you can make a garlic flavoured gratin with pastas as well. This cream sauce sounds almost like the white sauce but fresh cream is the key ingredient of this sauce.

Sugo Rosso - Red Sauce

Earlier, for me pasta sauce is always a quick sauce with tomatoes but later i learned many and now i make excellent pasta sauces. Pasta, this word itself makes my kids happy, they can have pastas everyday and they never get bored of pastas. However we have pastas atleast twice or thrice a week. My today's recipe goes for Sugo Rosso, this sauce is called Red sauce which is prepared simply with fresh tomatoes and flavored with basil leaves,garlic cloves. This sauce is very quick to prepare, easy to dish out and delicious to enjoy with pastas.

3 Cheese Pizza/Triple Cheese Pizza

France is famous for varieties of cheese,obviously my fridge will definitely have varieties of cheese.Having cheese at home,you can dish out cheesy dishes within few minutes. Cheese are good source of calcium and its advised to feed kids frequently.I do pizza often but with loads of veggies, this time i couldnt resist to make a simple thin crust cheesy pizza with three different cheeses.Kids love this easy cheese pizza which goes for a simple pizza crust, bottled pizza sauce and with mozzarella,emmental and parmesan cheese.

Pesto Twisted Bread

Today is the final day of a month of Bake-a-thon, this baking event happens every december of the year since few years.Eventhough i want to finish this event with a sweet note, somehow i couldnt stop myself posting this savoury pesto twisted bread. This bread is quite easy to make and simple to shape. A homemade or storebought pesto is quite enough to make this incredible twisted bread. A prefect bread to have with a bowl of soup or one can have simply for their snacks.

Pizza Swirl Rolls

Pizza, the word itself makes my kids super happy, whenever they hear the word 'Pizza' they will get hungry immediatey.Obviously i wont forget to make pizza quite often at home and after so many versions, my today's post is going to be Pizza swirl rolls.Pizza swirl rolls, can be prepared quickly if you have store bought pizza dough, pasta sauce and grated cheese at home but however you can still make the pizza dough at home if you dont want to get rite from the stores. To prepare pizza dough at home, its really very simple to make with easy ingredients.With flour,yeast,salt,sugar and olive oil, you can just prepare your pizza dough at home.Earlier, i always get my pizza dough or frozen pizza base from stores, but blogging pulled me to make pizza dough myself at home.

Cheese and Bellpeppers Focaccia

After pizzas, my kids just love focaccia. This Italian bread is prepared with yeasted dough and can be topped as much as like pizzas. I love to add more veggies as toppings when its comes to focaccia, however sometimes i wont hesitate a second to sprinkle some grated cheese over it. This time when i prepared the dough for the focaccia, i know i will go for both red and green bellpeppers as the topping with mozzarella cheese. Instead of sauting the bellpeppers, i just chopped them as tiny bites,trust me they gets well cooked while baking. Focaccia topped with bellpeppers came out extremely well with wonderful flavors. When served with a bowl of soup,this bread makes a filling dinner.One can have this focaccia simply with the soup or else with a cream cheese spread. However we had this focaccia without any spread for our dinner few days back.

Chinese Style Fusion Spaghetti

I love chinese cuisine,since am living in Chinatown chinese products are easily available for me hence i cook often foods with chinese ingredients. Few days back, my kids asked me to make some noodles for their lunch since ran out of noodles i simply replaced the noodles with spaghetti and made this fusion spaghetti dish. Served with a Hoisin sauce and sriracha chilly sauce based sauce, this chinese style fusion spaghetti tastes absolutely fabulous. Spaghetti or noodles however my kids went crazy when they saw this fusion spaghetti. I prepared the sauce with loads of vegetables and chicken breast, if you are a vegetarian just skip the chicken and go for soyachunks or simply tofu for making this same dish.

Pizza Bread Cups

Pizzas, every kid's favourite, make it with anything am sure kids will go crazy. One can make pizza just with bread slices, even pizzas can be done with Indian breads like chappathis, Naans or with Dosa.Even pizzas can be prepared easily and quickly with vegetables, will post soon a vegetable pizza i tried with zucchini and eggplant. Coming to today's post, this pizza bread cups are very easy to make. With some bread slices, pizza sauce, few veggies and cheese, you can easily make this pizza bread cups. These bread cups makes a fantabulous lunch box or snack box depending upon your kid. However my kids loved these pizza bread cups for their evening snacks. You can go for any vegetable or cheese depending upon your wish. Just some chopped onions also makes an excellent filling in this pizza cups.

Pasta in Vegetable & Tomato Sauce

Pasta, this word itself makes my kids happy, they love it to core and they can survive for many days with just pasta spiced with pepper powder and butter.Obviously after rice, pastas have their important place in our weekly menu. I'll try to make pasta atleast twice or thrice a week, as they are very easy to cook and you can make varieties of dishes out of them. We never get bored of eating pastas,eventhough in earlier days i wasnt a big fan of pastas. But now because of busy schedule, my cooking goes for easy peasy dishes and hence pastas have became an obligation for me to carry in my lunch box. Now i can live just with pastas for many days. Today's recipe is one of the quickest and easiest pasta dish to dish out with simple ingredients. Just some chopped vegetables and tomato puree makes this fantastic dish.

Lemon Poppyseeds Biscotti

I have been looking for a chance to bake some lemon biscottis and finally i got a chance to make some as am running this week's Blogging marathon with Lemon recipes as theme for this week. We love double baked biscuits which is well known as biscottis from Italian cuisine. Actually biscottis makes an excellent evening snacks to enjoy thoroughly with a cup of tea or coffee. My lil one love simply any variety of biscottis as he like biscottis to the core. Obviously i dont need any excuses to bake biscottis whenever i feel like baking some, but somehow lemon biscottis was sitting in my to do list since a long. Finally i prepared them for this week's theme. Trust me, we couldnt stop munching these beauties with our favourite drink.

Vegan Coriander Cashew Pesto

Pesto, this Italian dip/sauce is prepared traditionally with garlic,basil leaves with pinenuts blended with olive oil, parmesan cheese. The word pesto means to pound, to crush, as the original method of preparing this sauce goes for marble mortar and wooden pestle.Pesto is usually used to spice up the pastas, but now they can be used in making bruschetta,as dips, pizzas or else simply as filling in savoury breads.Some makes use of the pestos even to flavor their soups,in stir fries or simply as dressing for roasted vegetables and to flavour the meats.

Cheesy Zucchini, Tomato & Bellpepper Schiacciata

The word Schiacciata may sounds funny or hard to pronounce but its a yeasted flat bread mostly stuffed with a savoury filling or else simply with a sweet filling even sometimes without filling. Almost like Calzone or focaccia, this Italian flatbread is quite known as Classic Tuscan Flatbread.Schiacciata goes for simple ingredients and the main basic ingredients are flour,yeast and water. You can add other ingredients like olive oil,herbs depending upon ur wish. This flat bread is eaten every day as mid morning snacks, or for lunch or for dinner. But some may also have this flat bread during mid afternoon snack. If this bread goes for filling you doesnt need anything to add with, if its simply prepared as flat bread, just stuff it as you desire with vegetables,meats or simply with salads and have it as sandwiches.
