Who will say no to these cute looking vegetable loaded cheese shots. Made with simple vegetables like grated carrots, red bell pepper and sweet corn, these shots makes an excellent party appetiziers or else as a simple evening snacks. However these healthy cheesy shots goes for baking obviously this cuties are definitely healthy and guilt free. Trust me,you will definitely enjoy these shots while they were still warm.Actually the original recipe goes for both cooked potatoes and chopped spinach, since my vegetable basket was almost so i tried making this shots with all the vegetables i found simply from my fridge.
These shots are seriously one of the best way to include any vegetable of your choice which you kids will definitely hate for the sure. The best part about this recipe is, you could alter the ingredients according to your taste and what kind of texture you are looking for. You could also skip entirely the eggs, and make a firm ball which will be a mixture of cheese and vegetables.I made this shots easily with eggs. 1no Carrot (skin removed and grated)
1/2cup Chopped redbellpepper
1/4cup Sweet corn
100grms Cubed Cheese ( Mozzarella)
1no Egg
1no Green chillies (chopped)
1tsp Pepper powder
Salt
1/2cup Bread crumbs (increase or decrease according to your need)
Line up a baking tray with parchement paper, butter the paper and keep aside.
Add all the ingredients together in a large bowl except breadcrumbs.
Mix them well and slowly add the bread crumbs, mix well all together. Make sure all the ingredients are combined thoroughly.
Chill in refrigerator to firm up.
Once the mixture is firm, make balls and arrange it over the already prepared parchement paper.
Bake in pre-heated oven at 200 degree C for 20 minutes until the shots are golden brown.
Serve when they are hot or warm.
