My husband is an ardent fan of dry fruits cake, obviously my pantry will always have dry fruits and nuts. One of his favourite cake is fruits loaded cake, this cake ressembles almost like pound cake, though less egg is used. This recipe calls for butter eventhough you can replace it very well with any cooking oil. Actually i do this cake quite often by replacing half of the quantity of butter with oil. You doesnt need to soak the fruits overnite or in warm syrup, just add directly to the cake batter and bake it.However i couldnt stop myself adding some freshly squeezed orange juice and orange zest to the cake butter. This cake is quite simple to prepare, but trust me if you love loads of dry fruits in your cake then this cake is for you.
Am running baking marathon with few food bloggers, we are running successfully thrice a week since three weeks. This year's baking marathon asks for 13 baked goodies and we are almost towards the end of this marathon, yes we have four more posts to do. Am enjoying thoroughly this bake -a-thon eventhough my days are quite busy with xmas shopping and baking. 1+1/2cup All purpose flour
1cup Sugar
2nos Eggs
1cup Dried fruits (cherries,raisins,tutti frutti,golden sultanas,apricots)
1/2cup Butter
1/2cup Orange juice
1tsp Orange zest
1tsp Vanilla essence
1/4tsp Salt
1tsp Baking powder
1/4tsp Baking soda
In a bowl,sieve the flour,baking powder, baking soda with salt and keep aside..
Preheat the oven to 350F.
Beat together the butter and sugar until they turn creamy, add the eggs one by one,beat well and add the vanilla essence, slowly,mix well.
Finally add the orange juice, orange zest and beat well.
Mix a tablespoon of flour to the fruits and keep aside,this helps the fruits not to sink to the bottom of the mould while baking.
Now add the fruits and flour to the already prepared sugar-egg mixture,mix with a spatula,dont over mix, grease a loaf pan and pour the mixture into the pan..
Bake for 35-40minutes until a skewer comes out clean.
Let the cake gets cool completely and slice as per ur need and enjoy with a cup of tea.
