Basundi - How to make Basundi

Basundi is a one among the popular milk based dessert you can easily find in most of the marriage menu. This rich and delicious dessert is made simply with full fat milk, yes milk boiled in low heat with sugar until the milk gets reduced to half of the quantity makes this extremely delicious Basundi. Its quite a fantabulous sweet, one can enjoy along with some deep fried pooris, actually basundi makes an excellent pair with pooris. However people enjoy basundi chilled as much as like rabdi, an another milk dessert prepared almost like basundi. Basundi prepared with whole fat milk tastes absolutely divine and this dessert will definitely please everyone's tastebuds especially if you have sweet tastebuds.

I got a big bottle of Organic full fat milk from Mark & Spencer to make this ultimate basundi, trust me it came out extremely fabulous, when served chilled one can have a huge bowl of this lipsmacking dessert without any fuss. Though this dessert is loaded with sugar and nuts, its quite a nourishing one and makes an excellent dessert even after a heavy meal. Its been a quite a long i want to make this basundi at home and finally i did. Though this dessert asks for continous stirring and bit long cooking process, definitely basundi is worth to try.If you are a huge fan of milk sweets, dont forget to give a try to this beautiful sweet. Basundi, Milk Dessert

1litres Full fat milk
1/2cup Sugar
1/2tsp Cardamom powder
Chopped nuts (i used almonds, pistachios & cashews)
Few saffron strands

Take the milk in a heavy bottomed pan and cook in medium flame. Remove two spoons of milk and drop the saffron strands in it, let it sit for a while

Reduce the flame and cook on a slow flame, stir continously till the volume is reduced to half, for approximately an hour, dont forget to scrap the sides of the pan.

Add the sugar and cook on a slow flame till the milk thickens stirring continuously and scraping the sides of the pan.

Finally add the saffron milk,add the cardamom powder and cook on a slow flame for another 20 minutes.

Serve warm or chilled, garnished with nuts.
