Ponnanganni Keerai Poriyal/Sauteed Dwarf Copperleaves/Dwarf Copperleaf Greens Stir-fry

Fortunately Indian greens have their place in our weekly diet, i dont forget to pick our own Indian greens like Drumstick leaves, fenugreek leaves etc from Indian stores often. Obviously i love to cook with greens, but sometimes unfortunately we dont get super fresh greens as much as like in India. However, the best part of cooking with fresh greens asks for quick cooking to conserve their vitamins and minerals. If you want a quick meal with greens, its better to stay with simple, easy and quick poriyal aka sauteed greens. My today's post goes for a super healthy Ponnanganni aka Dwarf Copperleaf stirfry, an excellent side dish or main dish for people like me to love to have with rice.

Ponnanganni Keerai Poriyal, Sauteed Dwarf Copperleaves

This simple dish is prepared with garlic and shallots. This poriyal was cooked and clicked during my stay in India. I had a real pleasure to cook with home grown dwarf copperleaves as these greens are from neighbour's garden.My neighbour in India grows her own greens and vegetables in her terrace, everytime i visit her she never failed to give me her super fresh vegetables and greens. Those vegetables and greens tastes simply fabulous, seriously i miss them here. Coming to my today's recipe, its quite a simple dish with loads of nutritional values, easy to cook. Since am running this week's blogging marathon with Quick meals as theme, i couldnt stop myself to post this healthy dish today.

Keerai Poriyal, Dwarf Copperleaves Stir fry

3cups Dwarf Copper leaves (cleaned & chopped)
15 Shallots (chopped)
5-6nos Garlic cloves (chopped)
2nos Green chillies(slit opened)
1tsp Mustard seeds+urad dal
2nos Dry red chillies (broken)
Salt
Oil

Heat enough oil,let splutters the mustard seeds, urad dal and fry the dry red chillies.

Add now the chopped shallots,slit opened green chillies,garlic cloves,curry leaves,cook until the onions turns transculent.

Finally add the chopped dwarf copper leaves, salt and sauté for 5-6 minutes in medium-high flame.Dont overcook the greens, put off the stove.

Serve warm with rice.
