A brunch is a late morning meal eaten instead of breakfast and lunch. Weekend brunch have their important place as we dont have enough time to have our breakfast or lunch together during the week days. Honestly brunch is my favourite moment of mine, as i can make and enjoy my favourite bakes or foods with my kids and hubby. Though sometimes i dont plan or prepare something, some of our brunch goes for easy breezy, instant preparation. However most of our brunch will definitely have either muffins or cookies loaded with both fruits and chocolates, as we are ardent fan of chocolates.
I always want to make some baked goodies out of Almond butter and finally i tried baking these eggless version for our weekend brunch fews weeks back. My cousin sister brought me this almond butter for me from USA and i couldnt resist to bake some spongy, eggless chocolate chips loaded muffins with this incredible ingredient. Almond butter replace very well the butter in this muffins and these muffins came out extremely spongy and soft, my kids went crazy after having a muffin and even we just loved it. Almost like peanut butter, almond butter gives a wonderful flavor and texture to the bakes, totally we fell in love with this nutty smooth almond butter. 1/2cup Oil
1/4cup Yogurt
1/2cup Almond Butter
3/4cup Sugar
1tsp Vanilla extract
1tsp Baking soda
1tsp Baking powder
Pinch of Salt
1+1/2 cups All Purpose Flour
1/2cup Chocolate chips
1/4cup Almond meal
Preheat oven to 180C/350F.
In a bowl, mix the oil,yogurt and almond butter together.Mix in the sugar and vanilla extract.
In a separate bowl, mix the baking soda, baking powder, salt,almond meal to the flour and add this dry ingredients to the wet ingredients.
Finally fold in the chocolate chips.
Spoon into paper cup or in greased muffin pan.
Top it with some chocolate chips.
Bake for 20-25minutes or until a skewer when inserted, comes out clean.
Enjoy with your favourite drink.

Almond butter sounds like a flavorful substitution for regular butter. Muffins turned out great!
