During recent days, Paris climate was rainy and chilled but suddenly few weeks back its was like summer. The weather was very much hot drastically and we were happy to arrange our winter coats in cupboards. While the weather was extremely hot,i couldnt stop myself preparing some chilled salad to enjoy those sunny days. One among those salads is this super quick and easy chilled salad. Just go on with some chopped vegetables and a quick creamy dressing with buttermilk and mayonnaise, mix everything and your salad is ready to serve after sitting few minutes in fridge. To add the zing, i even went on adding some mini mozzarella balls and cubed potatoes, kids went crazy when i served this fantastic summer salad.
The addition of mayonnaise makes this salad's dressing more creamy and airy, however you can avoid adding mayonnaise. Though my kids are not big fans of mayonnaise, they simply love to have their salad with a dressing prepared with mayonnaise, hence i went for a buttermilk-mayonnaise dressing. This salad is going to be a part of this week's blogging marathon as am running this week's theme with Kid's delight -Soups and salads. Make this chilled vegetable salad, am sure kids will love it.
3cups Mixed vegetables (avocado, cucumber, tomatoes)
2nos Cooked potatoes (cubed)
Mozzarella balls (as per need)
1/2cup Buttermilk
1tbsp Mayonnaise
Salt
Pepper powder
1/2tsp Dried herbs
Whisk together the buttermilk,mayonnaise, salt, pepper powder, dried herbs in a bowl.
Take the cubed potatoes,mixed vegetable, mozzarella balls in a bowl.
Add in the already prepared buttermilk dressing to the vegetables, toss everything gently.
Keep in fridge for half an hour and serve.
Enjoy this refreshing salad.

Mayo dressing sounds very great and a wonderful yet simple salad for a light meal.
