Paneer & Bellpepper Peppered Rice

This week is going to be lunchbox friendly dishes, yes i picked Kid's delight-Lunch box as theme for this week's blogging marathon. Lunchbox is always something special if your kids carry their lunchboxes prepared from home. Though i dont pack lunch for my kids i just love lunch box ideas, and this theme is always my favourite among many fantastic themes suggested by Srivalli,the brain child of blogging marathon. Lunchbox is always the best part of school life, obviously every mom need to pack lunch boxes with healthy ingredients in it. Paneer is one of most favourite Indian cheese among the kids, anything cooked with paneer goes directly to my kid's favourite too. Needless to say paneer based rice dishes makes everyone happy at home.

Paneer & Bellpepper Peppered Rice


For the first day of this week's theme, i couldnt resist to dish out this simple, highly flavourful and super delicious rice with some paneer cubes and bellpeppers. Today's rice calls for freshly grounded pepper powder and this is the highlight of this rice. This rice is flavoured simply with pepper powder and you doesnt need any special masala powder to dish out this rice. Very quick to prepare, this rice takes hardly less than 15minutes if you have already cooked leftover rice in your fridge. However, kids will definitely enjoy this healthy rice.

Paneer Bellpepper Pepper Rice

2cups Cooked Basmati Rice/Leftover rice
1no Onion (chopped)
1cup Cubed Paneer (panfried)
1/2cup Green bellpepper
1/2tsp Cumin seeds
1no Green chillies (slit opened)
Few Curry leaves
1tsp Freshly grounded pepper powder
Salt
Oil

Heat oil in a pan, add the cumin seeds, slit opened green chillies, curry leaves and fry them until they turn brown.

Add the chopped onions, salt ,fry them for a while until they shrinks a bit. Add immediately the chopped bellpeppers and cook for a while.

Peppered paneer bellpepper rice

Add now the already cooked rice, pan fried paneer cubes to the pan.

Mix well for a while,add the freshly grounded pepper powder, toss gently.

Serve them with fried papads or fried potatoes.
