Eggless Mat Shaped Brioche Bread

I baked this mat shaped bread when i picked shaped bread as theme for Blogging marathon, since i have baked 4 different shaped breads, i couldnt able to post this mat shaped brioche bread under that theme. Obviously this bread was sitting in my draft for a while, since i have been blogging about baked goodies, its time to post and share. With less efforts and an eggless brioche dough, you can shapeand bake this mat shaped bread to decorate your dinner table. Though this bread already calls for sugar, you doesnt even need any spread to enjoy with. Brioche dough calls always for eggs, since i dont want to bake an eggy brioche i opted for silken tofu instead of eggs and this works awesome for making a brioche dough. If you dont like tofu, replace it with mashed and pureed avocado and avocado puree works very well too.

Sorry, i couldnt able to click a stepwise picture for this bread as i was baking late in a night. Trust me, i will click soon to show how i shaped this bread as am planning to bake some for christmas dinner. Am sure this bread makes an excellent centerpiece in your table if you are having a simple get together or else for a party. However, this shaped bread came out extremely prefect and my kids enjoyed munching them for their snacks. I prepared a medium shaped bread though i felt small sized mat shaped bread will definitely attract everyone at home.  This bread is going to be a part of Bake-a-thon.

1cup Bread flour
1cup Silken tofu
1+1/2cup All purpose flour
1+1/4tsp Active dry yeast
1/2tsp Salt
75grms Butter (room temperature)
1/2cup Milk
1/2cup Sugar
1+1/2cup Luke warm water
Chocolate chips (as per need)
Sugar pearls (as per need)

Stir the luke warm water, 1/2tablespoon sugar, and yeast in a small bowl and let stand for 5minutes until the mixture turns foamy.

Melt butter,add the milk and heat to lukewarm.

Take together yeast mixture, remaining sugar, butter mixture, silken tofu,bread flour, and salt in a bowl,  then stir in the all-purpose flour and knead everything to make a slightly sticky dough.

Knead dough on a lightly floured surface,until the dough turns smooth and elastic .

Arrange the dough in a greased bowl covered with plastic wrap, keep in a warm for an hour.

Roll the dough as a rectangular disc and cut as 11-12 long strips. (if you are planning to bake a medium sized bread).

Weave your lattice design on a greased or baking paper lined baking tray, trim or slice slightly the excess dough to give a mat shaped look.

Let dough get rise, covered loosely,keep aside for 15 minutes.

Preheat oven to 350°F for 5minutes.

Brush the top of mat shaped dough with milk.Sprinkle the chocolate chips and sugar pearls on the top and bake in middle of oven until golden for 20-25 minutes.

Enjoy warm or at room temperature.

  4. Wow, wow, wow -- Priya, that is a gorgeous brioche bread. Love the perfect mat weave and the golden color. It must have tasted sooo good. And using tofu as egg replacer is such a genius idea. LOVE it.
