Aloo Barbati/Yard Long Beans & Potato Stir-fry

If you are looking for a different side dish to cook with yard long beans aka long beans, then this incredibly easy stir fry will definitely please you. An interesting combo stir fry to enjoy with a bowl of rice or else with some rotis. Easy to dish out this stir fry asks for usual spice powders and easily available ingredients apart from the yard long beans.If you dont get this yard long beans you can replace these vegetables very well with french beans or beans.

Served along with hot piping rice and rasam, this stir fry tastes absolutely delicious. Adding tomato to this simple stir fry will give a subtle tanginess to this fantastic dish. I have bookmarked this side dish few months back when i was looking for something interesting and easy to cook with this yard long beans. Trust me, this fantastic aloo barbati is definitely a must to try if you want to enjoy this long beans in a different way.Am running with Special theme as theme for this week's blogging marathon , obviously am post few of my bookmarked recipes.

Yard long beans potato stir fry

2 Potatoes (diced)
250grams Yard long beans (cut 1 inch pieces)
1no Tomato (chopped)
1 Onion (chopped)
1tsp Red chilly powder
1/2tsp Cumin powder
Salt
Oil

Heat oil, add the onions and saute until they turns transculent, add the chopped tomatoes and cook until the tomatoes turns mushy.

Add the yard long beans, saute for few minutes, now add the diced potatoes and cook everything in medium flame for few minutes.

Now add the red chilly powder, cumin powder, salt and cook in simmer until the vegetables gets well cooked.

Serve warm.

  1. Simple, easy to make, every day curry. I haven't tried mixing other veggies with yard long beans -- will have to give it a try.
