Weather is too hot here, obviously am trying to cook earlier in weekends as well as in weekdays. Since we are crossing the highest level of hot temperature for the past three days, obviously we are sticking to drinking more water and eating salads than having some solid foods. However if you have some hungry tummies around you to feed especially for weekday lunches, you have to stick with some easy breezy dishes to dish and serve them quickly. My today's dish is one among those easy breezy but yet a filling and healthy dish to serve with simple side dishes.
I love this kind of easy dishes, as they gets ready very quickly than you can imagine. If you have some already cooked rice in your fridge, trust me this rice will take less than 5 minutes. Yes you heard it rite, apart from chopping mushrooms and flat beans,you doesnt need anything to chop. Since i used soya sauce and pepper powder, this rice will be mildly spicy. Kids will definitely enjoy having this rice with their favourite side dish.Am running this week's blogging marathon with Healthy Weekday Lunches, and this fried rice suits prefectly the theme.
2cups Cooked rice
1/2cup Chopped mushrooms
1/2cup Chopped flat beans
Soya sauce (as per need)
Pepper powder (as per need)
Salt
Oil
Heat enough oil in a kadai, add the chopped mushrooms and chopped flat beans, saute everything for a while until the mushrooms shrinks a bit.
Add the soya sauce, salt and pepper powder, take care not to add more salt.
Cook for a while, add immediately the cooked rice and toss everything gently.
Once the rice gets well mixed with the spices, check for the salt, add if needed.
Serve hot with your favourite side dish.
