Fried rice, this word itself makes me hungry, am an ardent fan of Indo chinese fried rice, obviously if i cross any new variety of fried rice, i dont forget to bookmark it immediately. Recently Vaishali of Ribbons to Pastas posted an easy breezy Mexican fried rice, i immediately bookmarked it and tried it yesterday for our lunch. Its a simple, super quick, delicious, flavourful rice with bellpepper, corn kernels. If you have cooked rice aside, then this rice dish will take definitely less than 10 minutes to get ready. Am running this week's blogging marathon with 'Bookmarked Recipes' as theme, though i have couple of bookmarked dishes sitting in my list since a long to try, i couldnt resist to post one of my recent favourite bookmarked recipe aka this Mexican fried rice. Mildy spiced this Mexican fried rice will definitely please anyone's tastebuds. Vaishali used chilly flakes in this rice to bring the spiciness however i could resist to add a teaspoon of tabasco.
2cups Cooked rice
3 Garlic cloves (chopped finely)
1/2cup Mixed bellpeppers (chopped or sliced thinly)
1/4cup Corn kernels (boiled)
1 Onion (chopped)
1tsp Tabasco
1/2tsp Dried Oregano
Oil
Salt
Heat enough oil in a pan add the chopped garlic cloves and saute until a nice aroma comes from.
Add the onions and saute until they turns transculent.
Add the mixed belleppers,boiled corn kernels, tabasco or chilly flakes, salt and cook for a while.
Add the cooked rice, dried oregano and toss everything well.
Serve warm.
