Pancakes makes an excellent super filling breakfast especially when it comes to Weekend brunch or for lazy breakfast. However pancakes are seriously easy to whip up as they goes for an easy preparation as well as a simple cooking process. My younger one love pancakes for his breakfast especially during weekends. When i picked Kid's delight-Quick Breakfast, i thought of whipping some pancake batter to please my pancakes loving son's tastebuds. And this time, i prepared the batter simply with whole wheat flour, chia seeds, buttermilk simply sweetened with maple syrup.
Yes these pancakes are completely eggless but not vegan, however i used buttermilk to prepare the batter. In case if you want to make some vegan friendly,just replace the buttermilk with your favourite vegan milks or else with silken tofu. This spongy pancakes makes a filling breakfast or brunch when served simply with honey or else with nutella. And this healthy pancakes takes just less than 10 minutes to get ready, hence am posting this whole wheat pancakes for this week's theme.

1+1/2 cups Whole wheat flour
1cup Buttermilk
1tsp Baking powder
1/4tsp Baking soda
1/4cup Oil
1/4cup Maple syrup
pinch Salt
2tbsp Chia seeds
Mix together the whole wheat flour,salt, baking powder,baking soda,chia seeds in a large bowl , keep aside.
Whisk together the buttermilk,maple syrup,oil.
Add gradually the dry ingredients to the wet ingredients until they turns as thick batter.
Heat a pan, pour a ladle of pancake batter, drizzle few drops of oil (if needed), cook on both sides.
Serve immediately.

Those pancakes are looking too good Priya, I am sure this will be readily accepted by kids..
My little one loves all the variety of pancakes and I am sure this one with chia seeds will be loved as well. shall try it next time.
I am always on the lookout for interesting pancake recipes... have all ingredients in hand, would love to try this for breakfast some day...

I have tried the pancake in a same way but without chia seed, will give a try on adding next time, sounds healthy!!!
