We are officially entered to Summer season since two days back, obviously i have been preparing some summer salads for our evening dinner as they are easy to dish out. I love to prepare my own dose of coleslaw at home. Coleslaw is a salad prepared mainly with finely shredded raw cabbage, which is usually served with a vinaigrette or mayonnaise dressing. Coleslaw is definitely a prefect summer salad as they are really very easy to dish out. This salad can be prepared earlier as they are easy to conserve and serve chilled for a meal. It can be served very well as side dish with grilled meats or fried meats or else they can be served along with French fries.Colselaw can be used in filling for making some sandwiches as well.
Am running this week's blogging marathon with Kid's Delight - Summer Salads as theme, my kids are great fan of salads especially if the salad is prepared with mayonnaise dressing. Obviously my kids love coleslaw very much as they eat this salad often in their canteen. Hence i gathered all the ingredients to prepare this salad for our sunday dinner and i served this crunchy salad with Srilankan Minced Meat Rolls. We enjoyed thoroughly this healthy and tasty salad without any fuss, and this is my kid's favourite obviously this coleslaw is going to this week's blogging marathon.
3cups Red cabbage (shredded)
1cup Carrots (grated)
1 Onions (finely chopped)
3tbsp Mayonaisse
1/4tbsp Mustard
1/4tsp Pepper powder
Add the shredded cabbage, grated carrots, finely chopped onions to a large mixing bowl.
Add the mustard, ground black pepper and mayonaisse to the vegetables and mix gently until the vegetables gets well mixed.
Transfer to a large serving dish, cover with cling film and place in the fridge.
Serve chilled.
This salad stays prefect for 2-3days in fridge.

Healthy and colorful salad,I prefer coleslaw more other than another salads.

Such a colorful slaw Priya. Though I like the taste of purple cabbage, hubby doesn't like it as it tends to be a bit hardy. However, I read somewhere that one can stir fry it quickly to make it a bit soft.
