This week's posts are going to be some Instant dishes, yes instantly easily prepared dishes are seriously life saver. I love instant dishes hence i do prepare them often. Earlier i was very much skeptical about Instant idlies or dosas, pickles etc. But my busy personal life pulls me to dish out instant dishes atleast twice a week as they are seriously very easy to dish out. Am running this week's blogging marathon with Instant dishes as theme.Instant foods are defined as foods that can provide quickly by reducing minimum time of preparation or cooking. Most of the instant dishes can be prepared less than 5 minutes depending upon their preparation and cooking time.
Am kick starting today's post with a fingerlicking goodness Pickle prepared with tomatoes. The traditional way of preparing Andhra style tomato pickle involves many days as the tomatoes are sundried for many hours. But this instant version is one of the quickest Andhra style pickle to please your tastebuds. I grabbed this dish from Sailu's page, i sticked completely to the original recipe and trust me this pickle is definitely a delicious one to try without any hesitation. This instant tomato pickle is completely garlic free, however i didnt missed the garlic flavor here. If you want to prepare this pickle with garlic, dont forget to add them while tempering.
1/2kg Tomatoes (washed and sliced as thin pieces)
1tbsp Salt
1/4tsp Sugar (optional)
1/2tsp Mustard seeds
1/2tbsp Urad dal
3nos Dry red chillies (deseeded & teared)
Few curry leaves
1/4tsp Asafoetida powder
1tbsp Red chilly powder
1/4cup Oil
Heat 4tbsp of oil in a large vessel, add the tomatoes and cook on high flame for few minutes.
Reduce flame and mash the tomatoes until the water gets evaporated.
The texture should be like a thick yet slightly loose consistency chunky sauce, put off the stove.
Heat the remaining oil in an another pan,let splutter the mustard seeds.
Add urad dal and dry red chilis and fry until they turns golden brown.
Add curry leaves, asafoetida, fry for few seconds.
Put off the flame and allow to cool a bit before adding the red chili powder.
Mix and add this tempering immediately to the cooked tomato mixture, add the salt and cook the tomato mixture till the oil floats on top.
Put off the stove and cool completely before stock them in an air tightened bottle.

Such and easy and flavorful tomato chutney. I really like the lovely red color.
