Have you ever prepared paratha with tofu, if not you should give a try them. Tofu gives a fabulous softness to the paratha and its stays prefectly soft even to pack in a kid's lunch box. I have been cooking with tofu since a long. Earlier i was bit skeptical to use this soya cheese as its was quite an unknown ingredient for me. However i have learned myself to cook with this incredible tofu and now its quite our favourite cheese which i never fail to cook with. I can easily get this soya cheese as am living in China town. Obviously tofu have its own place in my weekly cooking. Tofu exists in three varieties, silken tofu is used often in vegan desserts, firm tofu and extra firm tofu for making dishes out of it.
My today's paratha calls for silken tofu, as its easy to handle while kneading the paratha dough than the firm tofu and extra firm tofu. Since i want to add some vegetable to make this simple tofu paratha more healthy, i couldnt stop myself adding some grated carrots and grated zucchinis to the paratha. Obviously its quite a best way to sneak tofu, carrot and zucchini. Kids will enjoy thoroughly this dish without any fuss. And this paratha with a simple side dish or curries will suits absolutely prefect to carry in a lunch box. Apart from kneading and keeping the dough aside, this paratha takes hardly 15 minuts to get ready. And this post is going for this week's blogging marathon as am running this week's theme with kid's delight-lunchbox in 30 minutes as theme.

2cups Wheat flour
1/4cup Carrot (grated)
1/4 cups Zucchini (grated)
1/2cup Silken tofu
1tsp Ajwain seeds
Salt
Oil for cooking
Take a bowl, add the wheat flour, grated carrot, grated zucchini, silken tofu, ajwain seeds and salt.
Add the water gradually and knead everything as soft dough.
Keep aside for 15minutes, make 7-8medium sized balls from the dough, dust it with enough flour and roll them as round circles.
Heat a tawa, add the rolled parathas to the hot tawa, drizzles oil and cook in medium flame until both sides gets well cooked.
Enjoy this healthy parathas with your favourite side dish.

Tofu and zucchini both must have made the paratha so soft! It is a full meal in a flatbread.

No, never tried tofu parathas and parathas look very soft.
That’s a unique combination of veggies and tofu for a paratha , would love to try it . Tofu perhaps makes it really soft , melt in the mouth kinds !

I make with carrot and paneer. Tofu is a great vegan substitute .. they look really tasty, priya !
Love to incorporate vegetables in my parathas and adding tofu too must have added a wonderful texture and taste to this parathas.
