As per wiki,Corn fritters are a traditional savory Southern USA snack. Traditional corn fritters are a mixture of corn kernels, egg, flour, milk, and melted butter.They can be deep fried,shallow fried, baked, and may served with jam, fruit, honey, or cream. They may also be made with creamed corn, baked, and served with maple syrup. Corn Fritters may have a similar appearance to, and may be mistaken for Johnnycakes.I picked this corn fritters immediately when i went through Food Stubs from the three links given by Srivalli for the theme 'pick one do three'. I always want to try this cornfritters since a long, when i saw corn fritters in Food stub list, i couldnt stop myself to try my hands with this incredible fritters.
Corn fritters makes a fabulous brunch, when served with jam or honey with a bowl of hot chocolate, am sure you will definitely have a super filling and satisfying meal. I went for coarsely grounded canned sweet corn kernels instead of creamed corn also instead of deep frying, i simply went for shallow frying as am trying to avoid deep frying.Check out the Blogging Marathon page for the other Blogging Marathoners doing BM#48.
2nos Eggs
1/2cup Milk
1/2cup Self raising flour
1cup Coarsely grounded sweet corn kernels
Salt
Pepper
Oil for shallow frying
Beat the eggs along with milk,salt and pepper.
Add the coarsely grounded corn kernels, flour and mix everything to make a thick batter.
Heat oil for shallow frying, once the oil is hot, drop enough batter to the oil.
Fry in medium flame and cook on both sides until the fritters are lightly brown.
Drain the excess of oil with a paper towel.
Serve the corn fritters warm with ketchup,jam or honey.

I have never made this because they are deep fried. You made them healthier by shallow frying them.
