One of my recent trial with pearl millet aka Kambu is this fantastic nutritious kuzhi paniyaram, to make this dish more interesting i opted for sprouted green grams. Both make this dish more healthy and obviously delicious. Anybody can have this dish with their favourite side dish depending upon their tastebuds. I prepared this batter to try idlis out of it, suddenly i changed my mind and went for making these tiny dumplings using appam pan. These paniyaram aka dumplings came out extremely prefect and makes an excellent breakfast or snacks.
Adding millets and sprouts to a simple idly batter definitely increase the nutritious level. Its one of the best way to sneak both millets and sprouts this way, if you are planning to feed your kids with millets, you should give a try to this healthy dumplings. However this batter is versatile, you can make Idlies, dosas,uthappams etc, as you can with usual idli batter. 1cup Pearl millet/Kambu
1cup Sprouted Green gram/Whole Moongdal
1/2cup Whole urad dal(deskinned)
1/2tsp Fenugreek seeds
Salt
Wash and soak the pearl millet and urad dal with fenugreek seeds separately for 4hours.
Grind urad dal as fine paste and then grind the millet, sprouted green gram as a bit coarse paste.
Mix both batter,add enough salt and keep overnite for fermentation.
Next day give a stir to the batter.
Heat the kuzhi paniyaram pan in medium heat, pour few drops of oil.
Pour a small ladle of the batter, put the flame in simmer,cook slowly.
Turn on both sides until they get well cooked.
Dont cook in high flame...
Serve with spicy chutneys..
