I know few of you might be surprised to see the name of my today's dish, yes i prepared this wonderful looking paratha with carrot and raw mango. Actually i had some grated mango left aside after preparing sundal, i couldnt resist myself to add them while making the paratha dough. Honestly the addition of grated raw mango turned the parathas bit tangy while having eventhough they are grated. Carrot and mango works prefect in this paratha, however if you dont have or else dont feel like adding grated mango, just go simply with grated carrot. I used thinly grated carrots and thinly grated raw mango while kneading the dough, obviously none will notice the addition of veggies here.One of the best way to sneak veggies definitely if you have paratha lovers at home.
After a delicious vegan masala dosa, am sharing this great looking and vegetable loaded paratha for this week's blogging marathon as am running Indian bread baskets as theme. This paratha makes an excellent breakfast or dinner or else you make wraps with them along with a simple stuffing for your lunch. However we had this paratha for our dinner with simple peas kurma. 2cups Wheat flour
1/2cup Grated carrots
1/4cup Grated raw mango
1tsp Cumin powder
1tsp Garam masala powder
Salt
Warm water (for kneading)
Take the flour in a bowl, add the garam masala powder,cumin powder,grated carrots and grated mango, mix well.
Slowly add the warm water and knead everything as soft dough.
Keep aside for half an hour. Make medium sized pieces from the dough.
Dust each pieces with flour and roll as parathas.
Heat a griddle, drop the rolled paratha, drizzle oil and cook on both sides until they gets cooked.
Serve with curd, pickle or as wraps
