Spaghetti & Vegetable Pancake

As i told earlier,my kids just adore pastas in any form. Serve them anytime of the day with pasta they will never says no. After making a simple and super creamy pasta in mug, my today's post goes for an another interesting and definitely a kid's friendly dish. Yes my today's recipe goes for spaghetti pancakes. Very quick to make with simple ingredients. This pancakes goes usually for cooked spaghetti along with parmesan cheese and egg, since i want to feed my kids somehow healthy, i couldnt stop myself adding some grated carrot, celery and zucchini to make this delicious spaghetti pancake more colourful,catchy and healthy as well.

This pancake makes a filling brunch or else a super satisfying lunch depending upon how you serve this ultimate pancake. Adding vegetables to this simple pancake make this quick dish very healthy and catchy as well. I cooked this pancake as a medium sized single pancake and sliced it later to serve. If you want to make small sized pancakes just use a small frying pan and drop small portion of spaghetti mixture to make small sized spaghetti pancakes. Spaghetti & Vegetable Pancake, Pasta pancake

2nos Eggs
2cups Cooked Spaghetti
1/2cup Parmesan cheese
1cup Grated vegetables (carrot, zucchini, celery)
Pepper powder
Salt
Oil for cooking

Beat the eggs with salt,pepper powder, grated vegetables.

Now add the cooked spaghetti,parmesan cheese and mix everything well.

Heat in a medium sized pan, drop the prepared mixture to the hot pan, put the flame in simmer,cook with lid closed.

After few minutes, remove the lid and flip the pancake to get cooked the other side.

Serve immediately topped with ketchup.
