Am allergic to apples, i cant eat them just like that. Though i cant eat them raw, i can enjoy them either as cooked or baked. Obviously whenever i get a chance to bake or cook with apple i dont hesitate a second to dish out with apples. One of my recent trial with apples is this ultimate cake, this cake batter is simply prepared with usual basic ingredients along with loads of apple chunks and ricotta cheese.This cake tastes absolutely divine when served with a cup of tea for an evening snack that too when its cold outside..You can also start your day with this super spongy cake with a bowl of warm milk for a quick breakfast,seriously trust me you will definitely have a super filling breakfast.
If you dont like apples, trust me you should give a try to this cake and am sure you will enjoy thoroughly this chunky apple cake. The addition of apple chunks gives definitely an excellent taste to this cake. I'll advice you to enjoy this cake with a scoop of vanilla icecream or with a cup of masala tea.This cake is definitely very simple, quick and prefect cake to give a try if you are a beginner in baking.This incredible cake goes to this month's Bake-a-thon as am running thrice a week with baked goodies.
2cups All purpose flour
1cup Sugar
1cup Ricotta cheese
2nos Eggs
1/2cup Oil
1/4cup Yogurt
1tsp Baking powder
1/2tsp Baking soda
3nos Apples (sliced as chunks)
Preheat the oven to 350F.
Mix together the flour,baking powder and baking soda,keep aside.
In an another bowl, beat together the sugar,eggs,ricotta cheese,oil,yogurt until the sugar gets well mixed.
Add gradually the dry ingredients and mix gently,dont overmix, Fold gently half of the apple chunks.
Pour the batter to the greased mould, drop gently the remaining apples and pull them gently into the batter.
Bake for 20-25minutes,until a skewer inserted comes out clean..
Enjoy warm with a cup of coffee or tea..

ReplyDeleteI love to bake with fruits that I don't normally eat it raw too. But I love apples and this cake looks so soft, moist and delicious! Definitely going to give this a try sometime soon.
