Broccoli, this antioxidant rich vegetables is one of most interesting vegetable i love to cook often in my cuisine. This vegetable is definitely versatile, you can dish out many delicious and healthy dishes out of this green vegetable. Though i have tried couple of dishes with this broccoli, my today's post goes for an interesting stuffed paratha. Yes i prepared a simply masala with coarsely grinded broccoli florets,finely chopped mushroom which is simply stuffed and rolled as triangle paratha. I know very well that, feeding a kid with this broccoli is definitely a hard task, but trust me this broccoli -mushroom masala stuffed triangle paratha will be a big hit among the kids. Since i went for a grounded mixture of broccoli for stuffing, none will find out that this triangle paratha is prepared with broccoli until they have a bite.
Its definitely an interesting and best way to sneak this antioxidant rich vegetables, you can pack this ultimate parathas in your kid's lunch box. No need of side dish as the stuffing itself is quite enough to enjoy this paratha. My kids enjoyed simply this healthy triangle parathas for their dinner without any side dish though i enjoyed this parathas for my dinner with coconut chutney. Salt
For Broccoli Masala:
15nos Broccoli florets
1/2cup Chopped mushroom
1/2tsp Red chilly powder
1/4tsp Garam masala powder
1/4tsp Cumin seeds
Salt
Oil
Take the wheat flour and salt in a large bowl, add gradually the water and knead everything as soft and smooth dough.
Keep aside.
Meanwhile grind the cooked black bean as bit coarse paste..
Heat enough oil and let splutters the cumin seeds, add the grounded broccoli paste, chopped mushrooms,give a stir and cook in medium flame for a while.
Add immediately the red chilly powder, garam masala powder and salt, cook everything in simmer for few minutes, put off the stove.
Make 5-6 balls from the paratha dough.
Dust the balls with all purpose flour and flatten them with rolling pins.
Place a small ball of broccoli-mushroom masala over the flattened dough, spread the masala over the rolled dough , bring a edge of the rolled dough towards the centre.
Cover the masala with the dough, bring the another edge and turn the rolled dough as triangle.
Cook this parathas in a hot pan, drizzled with enough oil until they get well cooked.
Serve hot with any side dish or with pickles and curd.
