Kayi means Coconut and Sasive means Mustard in Kanada, hence Mustard coconut rice as this rice have these two ingredients as main ingredient to prepare this alluring rice. Usually prepared with already cooked rice, this mustard coconut rice makes an excellent main dish to serve along with fryums and boiled eggs. Am blogging this week's blogging marathon with Bookmarked recipes as theme.I have couple of bookmarked recipes to dish out, a big thanks to this theme finally i could blog atleast three dishes from my huge bookmarked list for this week's theme.
I have bookmarked this popular Kannadiga's recipe from Mysoorean long back, when i picked Bookmarked theme i seriously want to dish out this rice with any delay. Hence am posting this lipsmacking rice for this week's theme. Easy to make, this rice suits absolutely prefect to pack in anyone's lunchbox. With usual ingredients, this rice tastes absolutely delicious and we enjoyed it thoroughly with fried papads.
2cups Cooked Rice
2tbsp Oil
1/2tsp Mustard seeds
1/2tsp Urad dal
1/2tsp Channa dal
2nos Dried red chillies
Few curry leaves
Few Peanuts
To grind:
1tsp Mustard seeds
1/4tsp Turmeric powder
Few pinch Asafoetida powder/hing
3nos Dry red chillies
2no Green chillies
1/2cup Dry coconut aka Copra/Shredded coconut
Gooseberry sized tamarind pulp
Grind all the ingredients given under 'to grind' as smooth paste with just few drops of water.
In a pan, heat the oil, let splutters the mustard seeds, urad dal, channadal, dried red chillies, curry leaves.
Add the peanuts and fry until they turns golden. Now add the grounded paste and fry for a minute, let it cool.
Now add this paste to the rice, salt and mix everything well.
Serve with papads or boiled eggs.
