Mushroom Masala Stuffed Kulcha/Dhingri Kulcha

Kulchas is a cousin sister of Naan, made with baking soda/baking powder instead of Yeast which is usually used in making naans. This Indian flat bread  made with leavening agents are stuffed sometimes with spiced vegetable stuffings or else served simply as plain kulchas .Kulchas is quite a typical Punjabi recipe and Amritsar, a city in Punjab is famous for its kulchas and Naans.Usually eaten with chole aka channa masala, Kulchas makes a filling breakfast or dinner. If they are stuffed, they doesnt even need any side dish to have with.

Mushroom masala stuffed Kulcha


My today's post goes for an excellent spicy stuffed kulcha, yes i prepared a stuffed kulcha with my kid's favourite mushroom. My younger one is an ardent fan of mushrooms and he just love it in anything. When i was breaking my head for making a lunchbox friendly recipe for this week's blogging marathon theme, he asked me to bake some yeasted buns with mushroom masala. Immediately kulchas came to mind as it was bit late to prepare a yeasted dough. Hence my today's post goes for a delicious, kid's friendly mushroom masala stuffed kulcha. Since this kulcha is already stuffed, you doesnt even need any side dish to pack in your kid's lunchbox.

Dhingri Kulcha, Mushroom Kulcha

2cups Maida/All purpose flour
1tsp Baking powder
1/2tsp Baking soda
1tsp Salt
1tsp Sugar
3tbsp Oil
1/4cup Yogurt
1/4cup Warm milk

Mushroom Stuffing:
1/4kg Button mushrooms
2nos Onions (chopped)
1/2tsp Cumin seeds
1tsp Chilly powder
1tsp Coriander powder
1/2tsp Amchur powder
1/4tsp Chaat masala
1tsbsp Oil
Salt

Chop the mushroom as tiny pieces and keep aside.

Heat the oil in a pan,add the cumin seeds and fry. Add the chopped onions and saute until they turns transculent.

Add the mushroom pieces and saute in low flame for few minutes.

Now add  the chilli powder, amchur powder, chaat masala, coriander powder and salt and sauté for 2 to 3 minutes.

Cook until the mixture turns dry.

Allow the mixture to cool completely and divide into 4 equal portions.

For assembling:

Mix the flour,baking soda, baking powder, oil, yogurt, sugar and salt in a bowl.

Add gradually the warm milk and turn everything as a soft but not a sticky dough, cover the bowl with a damp cloth and keep aside for an hour.

Now flatten a portion of the dough, place enough mushroom filling in the centre.

Fold the dough to form a ball, dust the dough with flour and gently flatten them as round disc..

Mushroom Masala Stuffed Kulcha, Dingri Kulcha

Heat few drops of oil, gently drop the flattened kulcha.Cook on both sides until the kulchas turns golden brown.

Brush the hot kulchas with butter.

Enjoy with favourite gravy.
