Baked Sweet Empanada

Empanadas are most favourite pastry of Latinos. Every country have their own variation of this fantastic pastry. Though savory empanadas are well known for many of us, sweet empanadas do exists and they will definitely satisfy anyone's sweet tooth. Empanadas are the Spanish style of hand-pie or turn overs. Obviously this sweet empanadas are big hit among the kids, especially the addition of almond butter, chocolate chips turned this simple sweet empanadas more delicious and nutritious at the same time.Trust me these empanadas gets vanished very much quickly than you can imagine.

Am running this week's blogging marathon with Kid's Delight-Breakfast as theme, i couldnt stop myself posting these baked sweet empanadas for this theme. Apart from preparing the dough, these empanadas are very easy to bake with less efforts. Since the stuffing is already easy to mix and fill, this empanadas makes an excellent breakfast to please anyone's sweet tooth. Definitely kids will go crazy if you serve these baked sweet empanadas for their breakfast. Give a try, am sure everyone at home will love this fantastic turn-overs.

Baked Almond butter & Chocolate Chips Empanadas

For dough:
75grms Butter(cold)
1cup All-purpose flour
1cup Wheat flour
4tbsp Water
1/4tsp Salt
2tbsp Oil

For Filling:
Almond butter
Chocolate chips

Pre-heat your oven to 350F. Line up  your baking tray with parchement paper .

Grate the cold butter into a bowl. Add flours, salt and water into it.

Use your finger tips to combine the butter and flour thoroughly. Once the butter gets incorporated completely, knead and make a soft dough. Do not over knead.

Roll out the dough to 1/2 cm thickness,on your counter top or on a silicon mat. You can dust with flour if it gets sticky.

Use a round cutter. Cut out the dough into circles.

Sweet Empanada, Baked Empanadas

Add a teaspoon of almond butter into each cut out dough and add chocolate chips on top of the filling.

Fold each of them and seal well using a fork or fold the edges gently.

Arrange them on the already prepared baking tray, brush the top with milk and bake in pre-heated oven at 350F for about 20 to 30 minutes until the top becomes golden brown.

Cool just a bit on wire rack.

Serve immediately.

Empanadas look very cute like a conch shell. Simple filling but truly according to kid's taste making it delightful :)
