Some candied cherries were sitting in my fridge for a while to get finished, obviously i cant think other than baking with them. When i was purchasing my groceries, i couldnt stop myself to grab a box of sour cream, back home i was very much tempted to give a try to one of the most spongy and dangerously addictive sourcream cake with loads of cherries. Almost like pound cake, this cake came out extremely succulent with an incredible spongy texture. We loved it very much. Though this cake calls for sourcream, butter is a must and also you cant skip eggs in this cake. All these ingredients when whisked together makes this excellent spongy cake.
This sourcream cherry cake makes an excellent snack time cake or else a holiday special cake, if you want to make this cake more delicious, dont forget to add some dry fruits or else candied fruits. Yes you can prepare this same cake as a Christmas special cake as well. However i want to stick with cherries hence i baked this cake simply with candied cherries. If you are searching for a snack time cake, dont forget to give a try to this beautiful cake. 3cups All purpose flour
4 Eggs
1cup Butter (room temperature)
1cup Sourcream
1+1/2cups Sugar
1/4tsp Baking soda
1tsp Baking powder
1tsp Vanilla extract
1tsp Lemon zest
1/4tsp Salt
1/2cup Candied Cherries
Preheat the overn to 350F.
Combine together the flour with baking soda,baking powder and salt.
Beat the butter and sugar together until they turns soft, add the eggs one by one, add the vanilla extract, sourcream and lime zest.
Add slowly the flour and turn as smooth batter.
Fold in the candied cherries in the batter.
Pour the cake batter in a greased mould or a bundt cake mould and bake for 25-30minutes until the top turns golden brown.
Remove the cake from the once the cake gets cool completely.
Slice and enjoy with your coffee.

ReplyDeleteI have a big tub of sour cream and was looking for baking recipes with sour cream. Will try this cake. I might use dried cranberries, dried fruits and nuts instead of cherries. Cake looks yummy!!

Sakshi, am sorry i couldnt help u regarding the sour cream as am not living in India. I used 8 inch bundt pan. Hope this helps..
