Suji cookies is a quite famous cookies from Malaysia, this cookies are dangerously addictive and melt in mouth type of biscuits aka cookies. Ghee is the prominent ingredient for making this cookies apart from it this cookies calls for usual ingredients. Usually baked with coloured cookies dough, this cookies are excellent to munch with your cup of tea or coffee. I have bookmarked this recipe long back from Easy Cook. This marbled cookies are also known as Sugi Crystal cookies as this cookies are coated with caster sugar after baking. This process gave a crystal look to this cookies.
I opted for two coloured dough instead of three coloured dough usually these cookies calls for. However this double colour marbled cookies came out extremely attractive. Trust me this cookies are dangerously addictive, that you cant just stop munching them. If you are planning to bake this cookies, dont forget to bake them in huge quantity else you will regret later as these cookies gets vanished very much quickly than you can imagine. 1+1/2cup All purpose flour
1/4cup Almond meal
1/2cup Icing Sugar
1tsp Baking powder
1/2tsp Baking soda
1tsp Vanilla extract
3/4cup Icing sugar
1/2cup Melted ghee
Pink food colour
Caster sugar (for coating)
Sift together the all purpose flour,salt,baking soda and baking powder.
Then add icing sugar,the almond meal and vanilla extract.
Slowly add the ghee and mix well knead everything as a soft dough.
Divide the dough into two equal portions and to a portion add pink food colour and mix it.
Keep the other dough plain, Take a small ball from each dough.
Roll it smoothly as a ball and flatten it as a cookie.
Preheat the oven to 350F.
Arrange them on a baking sheet lined over a baking tray with enough space in betwee. Bake the cookies for 12-15minutes.
Once the cookies cool completely,coat them well with the caster sugar.
Enjoy the cookies.
