My kids are not big fans of Dates, obviously i love to add this incredible fruit in their diet either by adding them in Baked goodies or else in smoothies or shakes. I do prepare Homemade Date Syrup often and i'll try to add them in their milk. Obviously dates, this fantastic ingredient have their important place in our weekly diet. If i get an opportunity to bake something with dates how can i miss the chance to bake with. When i picked Kid's delight - Mini Baked Goodies as theme for this week's blogging marathon, i couldnt resist to bake these mini cakes.
Though this mini cake turned out bit dark in colour, this cake tastes absolutely delicious to have with your favourite drink. Since this mini cake is baked with chocolate chips, trust me this cakes will please anyone's tastebud's easily. Kids approved this cake as one of the the most delicious and ultimately spongy cake, watelse we need. As i told earlier, these delicious mini cakes are going to this week's blogging marathon.
2cups All purpose flour
2tsp Baking powder
1/2tsp Baking soda
1cup Sugar
1/4tsp Salt
1/2cup Dates syrup
1cup Canola oil/Vegetable oil
1/2cup Yogurt
1tsp Vanilla extract
1/2cup Chocolate chips
Preheat the oven to 350F, grease the mini cake pan generously and keep aside.
In a bowl, sieve the flour,baking powder,baking soda,salt, keep aside.
In an another bowl, take yogurt, dates syrup, oil, yogurt,vanilla and whisk well.
Now slowly add the wet ingredients to the dry ingredients, mix gently until everything gets well mixed. Dont overmix.
Fold in the chocolate chips to the cake batter.
Pour the prepared batter to the greased mould and bake for 20-25 minutes until a skewer inserted comes out clean.
Remove the cake, cool completely on a wire rack.
