If you are a lover of citrus flavored baked goodies, then this muffins will definitely please your tastebuds. I have never tried my hands in baking lemon and chocolate chips together in muffins, hence i tried my hands with this combo which worked simply awesome for baking this cute mini muffins.These muffins can be served very much prefectly for a breakfast or else for an evening snack. A simple and spongy muffins to enjoy if you feel lazy to prepare your breakfast, am sure this muffins will definitey satisfy your hungry tummy.
Adding chocolate chips to this muffins makes this baked goodies more delicious than you imagine. Lemon and chocolate chips works tremendously prefect and kids enjoyed these mini muffins thoroughly for their evening snacks. 2cups All purpose flour
3/4cup Sugar
1tsp Baking powder
1/2tsp Baking soda
1cup Yogurt
1/2cup Oil
2tbsp Lemon juice
1tsp Vanilla extract
1tbsp Grated lemon zest
1/4cup Chocolate chips
Preheat the oven to 350F, line the muffin tray with muffin papers.
In a bowl, sift the flour,baking powder,baking soda and salt.
Meanwhile in a small bowl whisk together the sugar, yogurt,lemon juice,oil and vanilla extract.
Pour the wet ingredients to the dry ingredients, grated lemon zest and whisk lightly. Dont overmix the batter.
Fold in gently the chocolate chips.
Spoon the batter evenly to the already prepared pan and bake for 15-20minutes until a skewer inserted comes out clean.
Transfer to wire rack and cool it.
Carefully remove the muffins from the pan, cool completely and enjoy.
