After Apples, pears are my favourite fruits, obviously if i plan to bake with pears, i have to literally hide some pears else i will finish them by eating. Fortunately its peak season of pears here, obviously my fruit basket is loaded with pears. When i picked Kid's delight - Mini baked goodies as theme for this week's blogging marathon, i decided to bake some mini eggless cake with pears. Since i dont want to bake something exceptionnal i just went with a simple vanilla cake with pear chunks. Trust me, even my picky eater enjoyed this cake for his snacks.Obviously he approved that this cake is definitely a kid's friendly baked goodies.
Though this cake have fruit chunks in it, if conserved properly this cake stays absolutely prefectly for a week in room temperature, but trust me this cake wont stay for a long, as this cake makes a prefect evening snacks to enjoy with your favourite drink. If you dont like pears or else if its not pear season in your place, just bake this same eggless mini cake with your favourite fruits.
2cups All purpose flour
2 Pears (peeled & chopped as cubes)
1cup Sugar
1+1/4tsp Baking powder
1cup Hung curd
170grms Butter (softened)
1tsp Vanilla extract
1cup Milk
1/2tsp Salt
Grease generously a mini cake baking pan, keep aside.
Preheat the oven to 350F.
Sieve the baking powder,salt,flour together and keep aside.Beat the butter and sugar together until the mixture turns soft and pale.
Add the hung curd,vanilla extract beat again for a while.
Divide the flour mixture and the milk as two equal part.
Add a part of flour mixture and milk to the beatened butter, give a stir.Now add the remaining flour and milk, mix everything well.
Spoon the prepared cake batter to half of the greased pan, top it with pear chunks, top again the fruits with the cake batter.
Bake in middle rack for 20-25minutes until a skewer inserted comes out clean.
Remove the cake from the oven, let it cool completely on a wire rack.
Enjoy with your favourite drink.
